Starting the day right! I'm eating oatmeal - made with steel cut oats, or groats, which is whole grain and has a lower glycemic index than rolled oats. If you aren't familiar with it, you must try it. For a long time I couldn't find it locally and had to order it, but WalMart carries it.

The drawback is that it takes longer to cook, but I soak it overnight which really reduces the cooking time. I also add some craisins or chopped dried apricots while it's cooking which sweetens it nicely. YUM!

What will be your healthy choice today?

Since I've been under the weather since New Year's Day I haven't done much cooking, but I finally got around to making a healthy, hot meal. Pulled out leftover Thanksgiving turkey from the freezer and used it in a skillet dish with onions, peppers, carrots, & broccoli. I added a can of cream of chicken soup with herbs. Went heavy on the veggies and it was enough for about 6 servings. Usually I don't use canned soups in cooking because of the high sodium, but with all the veggies it was OK (I didn't add any additional salt, but used plenty of black pepper.)

What are you cooking up?
