Growing up in Mississippi well you all understand that our food is not always the healthiest although it does taste good. I find myself searching out ways to fix my favorite foods because I can't just give them up. During the summer time one of my favorite foods is fresh fried okra. Now I could not begin to tell you how many calories are in normal fried okra but I can tell you that it is laden with all sorts of fat no matter what oil or grease or even lard you use. So yesterday i went in search of a better alternative to Fried Okra. I found the following recipe here on spark people. Oh my goodness it is delicious and taste the same as regular fried okra.
Oven Fried Okra:
3 cups slice okra 1/4 in slices
2 tabl. whole wheat flour
2 tabl. corn meal
Butter flavored Pam
slice okra in 1/4 slices toss with flour, cornmeal and seasoning. Spray and toss, spray and toss again.
Lay flat on baking sheet and bake 15-20 minutes at 350-400
Lightly salt and serve hot

Also in the south we eat a lot of fresh or frozen garden veggies like peas and butter beans ... if anyone knows of a good place to get solid nutrional info on these types of things please let me know. Please add your favorite recipes I love southern food and am constantly trying new things.
