Slice zukes in half longwize. Larger zukes can be sliced in three slabs, or if too long, cut in half crosswise and then in 3 longwize to make 6 slabs.
I use iron skillet. Lay slabs on skillet, round side down for the one that have a round side. Cook till hot but not burned Maybe 5 min. Turn over. Cook another 5. turn over again. cut heat way down or off, depending on how long your stove and pan hold heat.
Dab on top: pesto or picante or pizza/spaghetti sauce or ... and cheese - shredded is easy, but broken l slices could also work.
Put lid on pan. Walk away, pour your beverage, whatever, for a few minutes, while the cheese melts. Serve.
