While I know not everyone has a garden, I think its entirely possible to still make this fairly easily. We made roasted, smoked tomato sauce with our garden tomatoes this weekend. You take how ever many tomatoes you want to use (Roma hold together best but you can try any of them I suppose)
Cut the tomatoes in half, brush cut side with olive oil. We used our gas grill with alder wood chips. Put the tomatoes cut side down and let cook until the char marks are quite deep. Flip and cook until skin blackens in spots. Remove from the grill and put in a bowl covered with plastic wrap. Let cool. Once cool, remove skins and seeds.
We also roasted an onion the same way.
Once tomatoes are prepped, combine with onions (diced), green pepper (diced), garlic, oregano, basil and we used thyme. Add a bit of olive oil and simmer over med/low heat until your desired thickness.
The smoking adds an interesting flavor to the sauce which we had with some ravioli and garlic bread. Very yummy and everything was from our garden except the garlic and olive oil.
