Thanks for this post! I haven't made them yet, but I'm definitely going to try the quinoa way. Sounds yummy!

I know she says to not to count calories while on her plan, but that's part of who I am so I need to keep doing it. I put all the ingredients (sans seasonings) into the recipe calculator and it came out to 127 calories each. On her page, it says 80 calories. Anyone know what's up with that???

FWIW...I entered the entire phase 1 meal plan into my tracker for the day and it came too 1800 calories - pretty much what I eat already, just more protein and less carbs :-)

I have been meaning to try the turkey muffins. Maybe I will make some this afternoon!

Good idea about the quinoa.
I was out of oatmeal but had steel cut oats (or some name like that). It's not flakes, but granules. I soaked it first in hot water and then added it to. Turned out good, added a nutty texture to the meatloaf.

OK so I made the turkey muffins with quinoa and curry seasonings and they were delicious!

I like them better with the quinoa, not nearly as gummy/gluey from the oats.

I cooked the quinoa first (20 min 1:3 ration quinoa to water) added my curry,salt, tumeric garlic powder directly to the water while cooking which helps infuse the flavor into the quinoa.

I substituted this for the oats in the recipe and swaped the cumin and other seasonings for more curry and tumeric. The quinoa really adds some great extra protein to the muffins :)

My whole family loved them!

I was the weird kid in our family that didnt like meatloaf either and I still shy away from it- but the turkey muffins are good. I love the cayenne. Dont remember cumin, but I dont have that in my cupboard so maybe i skipped it. Eyeing a package if ground turkey in the fridge that has been there forever (think its the roommates) because I should make more.

You have a fear of meatloaf? lol My mom is like the queen - always comes out great and she never follows a recipe - totally jealous and bf always says "it's not as good as your mom's"! lol

I can't wait to hear. Love quinoa. It is a staple in our house. That and couscous. Not sure what will happen in the recipe. Non-cook Kristin. Haven't done the muffins. Think it is a childhood fear of meatloaf. Everyone raves, so maybe I need to break out of this box. The BF would be happy:)

I just made a batch of the turkey muffins and they were a hit with everyone! (i didnt add the spice because i cant do heat). But i was refluxing cumin for the rest of the day! Ack!

Im going to tweak the recipe and do a curry/tumeric turkey muffin!

I want to substitute the oats for quinoa. Does that seem OK? Quinoa is loaded with protein so i think it is a good substitution, i would just cut the quantity back.

OK ill let everyone know how it turns out....eventually LOL
