OK so I made the turkey muffins with quinoa and curry seasonings and they were delicious!
I like them better with the quinoa, not nearly as gummy/gluey from the oats.
I cooked the quinoa first (20 min 1:3 ration quinoa to water) added my curry,salt, tumeric garlic powder directly to the water while cooking which helps infuse the flavor into the quinoa.
I substituted this for the oats in the recipe and swaped the cumin and other seasonings for more curry and tumeric. The quinoa really adds some great extra protein to the muffins :)
My whole family loved them!
