Sophie, it is so easy. This time I also added a splash of whiskey to it. The alcohol cooked off and I think it gave the sauce a great added taste.

I love making tomatillo sauce and it is so easy. I just quarter the tomatillos after peeling the papery skin off and washing them, throw in a coarsely cut onion, some garlic and coarsely cut jalapenos, cover it and let it cook slowly for an hour. The last time I made it I used a pasilla pepper because I had never had one but it was too mild.

Jules, I agree with everyone else that your best bet is probably to make it yourself. However, if you are like me & don't have time, you might want to look at Hatch Green Chili Enchilada Sauce. It's got a lot of processed stuff in it, but I don't think it has anything that could be defined as non-vegan.

Ingredients
Water, Flame Roasted Green Chiles, Modified Corn Starch, Soybean Oil, Salt, Sugar, Diced Jalapeno Peppers, Hydrolyzed Corn Protein, Autolyzed Yeast Extract, Corn Syrup Solids, Onion Powder, Spices, Citric Acid, Garlic Powder, Acetic Acid, Natural Flavors, Green Peppers.

A Mexican to the rescue...

Make your own sauce. Roast some poblanos, jalapeños and tomatillos. You can roast some serranos if you want to make it extra spicy. After you roast the items let them cool just a bit and them place them in a plastic bag to sweat. This will make them easy to peel. Once they cool down and are easy to handle remove the skins, slice them open and remove the seeds. Throw them in the blender with a little bit of veggie stock but not too much. You can thin it out as you need to. As you are blending do a little taste testing for salt. Add a teaspoon at a time so that you don't overload on the sodium. Ta-da!! You made your very own sauce.

hey howdy!

I've heard that some green enchilada sauces are not vegan, and I was wondering if anybody knew of a brand that definitely was. I'm planning a chili recipe that i can label "vegan friendly", but i wanna be sure the enchilada sauce I use is vegan friendly, or I'll feel like crud (can't wait til my next paycheck so i can go find out for myself!).

any help would be great, or if you know any incredibly similar items, that'd be great
