I think that I will just use quinoa in the future for a similar kind of grain. I just roasted and then boiled mine; added nothing but the water.

I am sure that it could be good with butter or sugar but I'm not doing those "enhancers".

I have some amaranth that I will try soon. I think I like my grains with a nuttier, crisper mouth-feel.

Teff is ok, but not one of my favorites. The last time I bought some I made some injera with it, but the recipe must have left something out because it didn't come out right. I have since found another recipe that looks more complete...procedure wise...so I may give it another shot.

I've been wondering about teff. Supposed to be really nutritious. I'd want to make sure I cooked it with something really flavorful so it wouldn't be so bland...thanks for the heads up.

If you want to share any recipes or cooking techniques, they are always welcome!!!

I had some teff last night and was not crazy about it. It's got the smooth bland texture of cream or rice or polenta, but it really did not have any flavor. And I roasted it first.

I wonder if anyone else has experience with teff?
