I bought a machine that spiral cuts it and then boil it for 7-8 minutes and it's great as spaghetti. Super low calorie and filling. I got the vegetable slicer from amazon. Not sure if the big box stores sell it or not. Well worth the money.

Looking for some good healthy recipes for zucchini, given it is readily available now. I keep trying to find a good one for zucchini patties (to bake, or fry with spray only). So far I get the edge tasty, but the center never seems to get done...got any suggestions?

tried a new recipe tonight. it was a modification from a dLife recipe that i plugged into my sp calculator to make sure it'd work. it was eggplant lasagna and it was GREAT! had to exchange pasta sauce for marinara but i ended up coming out ahead in potassium for it.
