cauliflower puree! Super Yummo! I was looking for a healthy alternative to mashed potatoes, but so many recipes for pureed cauliflower were complicated. Then I found this recipe: you steam a head of cauliflower all chopped up for 10-12 minutes. Then put in in the food processor w/ 1 Tbsp EVOO and salt and pepper to taste. Even my picky "no vegetables for me" husband eats this and gets seconds.

I made a lovely butternut squash soup yesterday.

It had butternut squash, of course haha, and red & yellow peppers, onions, celery - for my veggie, and it had an apple in it too for my last fruit of the day.
