Made this for dinner tonight and it was great.

Stuffed Cabbage
1 pound of 96% ff ground sirloin (I used ground chicken)
1/2 cup instant brown rice (I used 1 cup cooked bulger)
1 can of tomato soup
1/4 cup of water
4 cups of cabbage or cole slaw mix
1 large onion chopped
1 clove of garlic minced
salt and pepper


preheat the oven to 400 degrees.

Brown the sirloin in a large dutch oven. Drain. Mix everything else into the sirloin. Pour into an ungreased casserole dish and cover. Bake for 45-60 minutes.

Will be my breakfasts:

Oatmeal with fruit

1-2 servings Quaker oatmeal
strawberries
blueberries
banana
splenda to taste (optional)
skim milk


Broccoli and cheese Fritatta

2-3 eggs or egg whites
1/2 cup of broccoli- blanched (or leftover cooked)
1/4 cup of onion sauteed
FF cheddar cheese (my favorite) but can use any other cheese
S&P to taste

After onions are sauteed and broccoli is prepared, pour eggs over top when starting to set, top with cheese then place in 450 degree oven until eggs are cooked through and cheese is melted.

You can eat this at any meal!






One bite, one day, one pound at a time. Remember you are worth the effort!

Broccoli Salad

3 heads of broccoli (cut flowerets into bite size pieces)
1/4 cup diced red onion
1 cup grapes (cut in half)

3/4 cup mayo
1 Tbsp vinegar
1/4 cup splenda

Mix mayo, vinegar, and splenda then pour over salad.

Personal note:
I used less onion and I used 4 pkg of splenda.
Best if you let the salad chill for about an hour or even better overnight.
