Tamagoyaki is awesome! I whipped up one in 5 minutes this morning before work for my bento today.

Yesterday's bento was an utter flop. I tried making some pan-fried tofu glazed with a mixture of teriyaki sauce and honey, but ended up burning it. Yuck! The carrot slices glazed in honey and balsamic vinegar turned out pretty good though, but the brown rice was bland. I wish I'd brought some soy sauce or something to put on it.

I'm hoping today's will be better...it's a bit simpler. Just brown rice with nori, some cut up crab sticks, a tamagoyaki, and some edemame. If nothing else, it's prettier than yesterday's! :P

Today's bento (which is also my very first bento) was 3 onigiri (slightly bigger than golf ball-sized) sprinkled with sesame seeds and 5-spice powder, and stuffed with canned tuna mixed with 5-spice powder; a one-egg tamagoyaki, some stir-fry veggies, and some fruit snacks. It was so easy to make and assemble and oh soo yummy! I can't wait to try more variations.

Gosh, all that fruit sounds yummy. Now I'm thinking I should pack up a snack bento to go with me to class too. (ponder) Some fresh fruits with yogurt maybe.

Today's bento is actually for my dinner, since I have class tonight. Vegetarian nikujaga, brown rice, umeboshi, steamed broccoli florets, and grapes.

Good on you! Its so easy to lapse into a sort of apathetic mode when the kids are away and there's no one to set an example for.

Humpday bento:
4 Morningstar Farms mini veggie corn dogs
2 oz onigiri with sea salt
1 oz red pepper strips
8 organic cherries
2 Dole pineapple rings

(The boring photo for my icon today...I don't have time to make kawaii bento right now since I am putting in 16 hour days. My goal is to do one a week, maybe Mondays. We'll see.)

With one kid at camp and one at a friend's house, I'm all by my lonesome today. So the bento aren't anything terribly thrilling, just leftovers: roast chicken, buttered fingerling potatoes, baby peas with mint and a handful of cherries.

cowboy beans and rice, sliced pear and some weird looking crackers that I didn't even know were in our kitchen.

Well, today's bento was going to be my challenge bento. Leftover ratatouille from dinner with a slice of baguette and a sliver of chevre, and then a cute little French flag sidecar made from strawberries, blueberries and vanilla yogurt.

My hubby ate it for a snack last night.

Back to the drawing board.

Lemon Pepper Chicken breast, green beans, 1/2 cup brown rice, cauliflower. Red delicious apple slices, cut into pretty strips, sprinkled with lime juice. Sauted(sp?) tomatoes, basil, and garlic in 2 teaspoons olive oil.

I molded the rice in a dome shaped cup measure. I cut the green beans into 1 inch strips, and used them to create a circle around the domed rice, kindof like one of those log cabin things, overlapping. Then I arranged the cubed chicken around the fence of green beans, and filled in the rest of the bottom of the box with steamed cauliflower. All in all it looks good, although I am a little dissapointed in the color scheme. It's all white and tan except for the green beans... I will plan better next time.

Oh, and for a snack today I have strawberry soy yogurt with fresh blueberries and strawberries cut into slivers. And the fiber powder...


Yesterday I was off work, and I went to the Zoo with my friend and her 4 year old son. I decided I would pack my lunch, to save $ and because I didn't trust myself ordering out right now. So I made a turkey sandwich on organic whole wheat (only bread I could find that doesn't have HFCS in it), with a little mayo. I cut it in half and separated it in the bottom of my box with 5 home grown orange cherry tomatos. In one of the top sections of my box I had a red delicious apple with lime juice, which my godson proceeded to steal half of (I don't really mind). In the other, soy yogurt with blueberries.

Maybe these things don't count as bento? They're not asian...but I feel so creative when I make things beautiful, and it makes me happy when I open my box.

Brown Rice with Soy sauce (on the side right now), separated with raw green beans, just enough to form a barrier, from cubed chicken breast I cooked last night in a little olive oil with some Tony Chachere's Seasonings. Then in one of my smaller containers that is built in I have sauted (sp?) tomatoes, garlic, and basil in a little olive oil. In the other one I have baby spinach, a couple of cherry tomatos with a red wine/olive oil dressing I threw together on the side.

For a snack I had granny smith apple slices (sprinkled with lime juice to keep them from turning brown) with 2 tablespoons of peanut butter.

My other snack is going to be soy yogurt, strawberry, with some fiber powder (tasteless, textureless) mixed in.

Oh, and my before workout snack (have to eat before, I'm diabetic) is a Kashi Go-lean crunchy bar, the Peanut Butter and chocolate one. Yum!

Tamagoyaki is a rolled omelette. It looks really pretty in a box, and if you've watched any anime, it's the yellow roll you'll see in their bento. It's slightly sweet, normally, although my hubby prefers it without the mirin. There's a pretty good recipe for it on Just Bento. She's got a recent entry for a one egg version of it too.

Packing bento for hubby and I to take to class tonight. Oh the joys of having a night class from 6-10. Anyway...

Today's bento will be curried chicken, snow peas, brown rice, cherries, bacon wrapped waterchestnuts, and steamed broccoli. If there's room, I'll try to tuck in some tamagoyaki too.

Because I just ordered a laptop lunchbox for myself for my birthday, (don't have it yet) I made a bento and took a picture, but don't know how to post it.
Anyway, it included: Crab Classics chunks, red grapes, carrot sticks, bread sticks, gardinara and pasta salad. Stats: 367 cal, 55g carb, 12g fat, 10 g protein. Not too bad!

Today's bento was my theme challenge bento. I made a nice "grassy field" of chopped buttercrunch lettuce. Then I made a stepping path of little orange slices across the lettuce, made some carrot flowers, and sliced my flower shaped egg in half for more flowers in the field. Then, a bunny container for my salad dressing. Tasty and cute!

Today's Bento wasn't very themed just kind of cute!
I made two shaved corned beef and pepperjack cheese sandwedges shaped like Ice cream cones. Banana flower slices. A spider gummy and a green citrus slice gummy. Strawberries, mushrooms, and cherry tomato sprinkled with mini carrot flowers. One Organic chocolate milk (reduced fat) that had a cute cow on it.

Today's bento was ocean themed with 2 Octopuses(vegie hotdog) red Coral (Strawberry bottoms) Sea anenemy (Strawberry leafy tops) Coral reaf (Vegitable Sushi rolls) Fish (fried firm tofu) seaweed (Cealery leafs) I also put two cherry tomato sliced in half with slced side up for added effect.

The bottom compartment was just dividly cute with four cupcake holders filled with goodies. 1 had sliced mushrooms and grapes, 2 had a cookie with a cut out bird from cheese on top, 3 star shaped vineger brown rice with a sad x_x face made of nori, 4 about six baby carrots.

Today I had a simple bento. The bottom tier had mujadarra (lentils and bulgar wheat) and the top tier had a mixture of fresh fruits (kiwi, pear, apple, and strawberry).

I guys! I just joined this group as I eat a bento for lunch every day.

Today I had roasted onions and zucchini with salt, pepper and lemon juice, grilled tequilajerk chicken, corn and wild rice. I was totally tempted by the smell of fried foods earlier today, but my bento was yummy and healthy and waiting for me!

good morning

Ok today I have my 2 tier blue hello Kitty bento. on the big top I have celery cottage cheese and 2 sugar free dove chocolates and a 90 cal granola bar. on the bottom i and 1/4 cup peanuts and 1/2 cup of y own trail mix. I also Have a salad on the side. hehehe couldn't fit into my bento and I wanted my salad. I have 2 more days of bento's in the fridge but I'll save those for later.

My bento consisted of 3 silicone muffin cups: one filled with homemade roasted soybeans, the other with tangerine sections, and the last one with steamed baby carrots. The rest of the bento was filled with spinach topped with canned tuna fish mixed with red wine vinegar, dijon mustard, salt, and pepper. It was super duper yummy!!

I've done that before with adding chicken breasts and it is super seriously yummy! And then I started getting really creative with it and tossing in frozen mixed veggies, or the broc/cauli/carrot blend...

A box of stuffing, a low fat cream o' somethin soup, some veggies and a protein and you have a meal.

Happy eating!

Oh, and the best part, is if you do make those sorts of casseroles, they fit nice and tidy in a bento. Put a little cheese face (or flowers, or critters) and it's super cute!

Ooh, that sounds really good! It reminds me - a friend at work told me he sometimes cooks stuffing & cream of chicken soup in the oven - just the two ingredients - and I was thinking of modifying it by adding chicken breasts.

I'm definitely going to try this recipe!

Sorry dears, life and work went a little wonky. I swear I'll get it onto sparkrecipes soon, but in the meantime....

2 medium/1 super large zucchini, sliced
1 box cornbread stuffing mix
1/2 c. light sour cream
1 can reduced fat cream of chicken soup
1 red bell pepper, diced
8 oz fresh mushrooms, sliced
1 medium onion, diced
1 clove garlic, minced or 1 T jarred minced garlic
1 T olive oil

Heat oven to 375. Put half the olive oil in a good nonstick skillet (I used my cast iron.) Saute zucchini then set aside in a bowl. Saute remaining vegetables in remaining olive oil. Yep, it was all those and the casserole, you're right. I'll post the recipe to sparkrecipes tomorrow and link you. It was delish. I adapted one of my granny's old recipes by adding in fresh mushrooms and red bell pepper to the casserole.

Because I knew I was going to be in class for 4 hours last night, I packed a dinner bento and a snack bento. Dinner bento was a chicken sausage, sweet potatoes, broccoli, and zucchini casserole. The snack bento was berries and cream yogurt and some thawed frozen fruit mix. Bummer my camera's on the blink.

I made bento lunches for my boy and I last night for lunch today. My first time ever ^^

I made grilled chicken and fried rice with carrots and brocolii chopped up in it for myself.
And for my boy grilled chicken with green and orange bell peppers and the fried rice I had made for myself.
It was good. I'm glad I decided to pick up some bento boxes :)

I've got a bento today! Sliced strawberries with a dab of sugar on them (would have used equal but it's all gone), baby carrots, sauteed chicken over rice and roast beef over rice :) and 4 thin mints for dessert! :)

My daughter wants a bento box for school! LOL! she took 3 rice balls for lunch today. 2 had roast beef and one was plain. it's what she wanted ;)
