Salad # 1

CUCUMBER YOGURT SALAD
Your dairy. Refreshing!

* I like to make this salad in the summer.
* I use pickling cucumbers
* I use Kefir yogurt - low fat, plain. Love it. You can use non-fat plain yogurt, but not the thick ones (like fage). That way you can count it as your dairy serving, especialy if you follow the Simply Filling Technique (which I follow, with many twists.... to fit me...)
* You can add fresh mint, chopped, if you like


INGREDIENTS

Cucumbers, peeled and sliced ( I use about 12)
16 oz. non-fat plain yogurt ( I use Kefir , low fat, plain)
Garlic to taste, minced (I use about 6 galic cloves)
Salt and pepper, to taste (I don't use salt)
Fresh baby dill, chopped fine (I use almost half of a large bunch. Love dill. )

Mix all and refrigirate.
