It calls for 10 oz. light (2%) Velveeta Cheese (not soup)...and I just put the vegetables in the crockpot in their frozen state. I put it on high for the first hour or two and then turn it down to low. I have also fixed it on top the stove in a soup pot and it turns out just as good. Just cook until vegetables are tender....nothing really needs "cooking all the way thru" other than the vegetables..and making sure the cheese is melted. If you use the "real" Velveeta you need to re-figure the points values.

I have all the ingredients for your cheesy vegetables soup except the light velveta soup.
I'll make it today. 1 point per cup is a fantastic bargain for a filling soup.

1. Do you cook it on low the whole time or start high until it simmers?
2. For how many hours?
3. Do you throw in the FORZEN vegetables?

I'm so glad you enjoyed my White chili recipe. It's yummy, isn't it? I used canned beans.

Here's the one I made today:

Cheesy Vegetable Soup:
32 oz. fat free chicken broth
1 can rotel
10 oz. lite Velveeta Cheese
2 lbs. Calf. blend frozen vegetables

Simmer in crock pot until vegetables are tender and cheese is melted and well blended. 1 cup = 1 point

I think it means a can. I bought the beans in a 48 oz. can. I drained and rinsed them well.
For this recipe I see using only the canned. Not the dry beans. That will take much longer to cook.

Wow, this sounds good! Where do you get the jar of beans? I've seen dried bags of beans, or cans of them, but don't think I've ever seen them in a jar. So, would you use the canned or dried in this?

I've made this white chili yesterday and both me and my husbamd loved it.
It's very filling, delicious and so EASY to make.
A winning combination!

****************************

Weight Watchers White Chili:

1 - 48 oz. jar (can) of Great Northern Beans
2 c. fat free chicken broth
4 c. diced cooked chicken breast
2 c. Salsa
1 c. 2% mozzerella

Combine all ingredients in crock pot on low 4-6 hours.

1 cup = 3 points
