I am always looking for ways to make eating healthy cost less.
As a single person, I often cook in bulk and freeze portions. I am probably the last to learn this, but I just found a new way to cook sweet potatoes. It is so simple and very versatile. Simply wrap the potatoes in foil, stand them upright and put them on low in the crockpot overnight. The skins and any places in need of removeal can be done easily the next morning when cooled.
I use sweet potatoes, pumpkin, and squashes interchangeably in many recipes.
