Thank you for the tip. I will try it.

My NEW appliance is a CONVECTION oven from Costco, $49.00
It also is a toaster, it broils and bakes too.
It works amazing. it sits on the counter and I've started using it now all the time instead of my double oven.
I cooked 5 large sweet potatoes in the small convection oven and it turned out wonderful.
In the summer it will be even better. The kitchen will not be hot.

I did not know that about the sweet pot. in crock pot. Thank you. I put mine in the microwave 2 at a time. Crock pt sounds great if you are doing more then 2. Caroline emoticon emoticon emoticon emoticon

I am always looking for ways to make eating healthy cost less.
As a single person, I often cook in bulk and freeze portions. I am probably the last to learn this, but I just found a new way to cook sweet potatoes. It is so simple and very versatile. Simply wrap the potatoes in foil, stand them upright and put them on low in the crockpot overnight. The skins and any places in need of removeal can be done easily the next morning when cooled.
I use sweet potatoes, pumpkin, and squashes interchangeably in many recipes. emoticon
