Yes- and the best way is to try new stuff on your long run.
On race day use what worked for you during your training runs.

I liked seeing how most of them eat simple like oatmeal, or toast & coffee etc...

Interesting! The lesson to learn is that we each need to do what works for us, not what works for them. We all have different needs.
