You're right. My recipe is called pumpkin fluff, but I call it ALMOST pumpkin pie....smile


Here is the recipe for the Crustless pumpkin pie, that I like very much. Not as the real one, but the whole pie is 8 points.
My girlfriend brings it on Thanksgiving, and I eat half of it for 4 points!

Crustless Pumpkin Pie

Servings |8 )someone wrote 4 servings, but I think it is a mistake...

Ingredients
15 oz canned pumpkin
3/4 cup McNeil Nutritionals SPLENDA No Calorie Sweetener
1/2 cup Egg Beaters Frozen Egg Substitute
1/4 cup fat-free evaporated milk
2 tsp pumpkin pie spice

Instructions
Combine all ingredients and pour into a soufflé dish or glass pie plate sprayed with cooking spray. Microwave on high for 14 minutes. Allow to cool and serve with FF cool whip.

You are doing all of the things which compose a healthy lifestyle. Remaining accountable is one of the most important things you can do. As far as the activity level, naturally it will vary. It takes dedication to put the extra effort in when time permits. Remember, simply doing regular household chores, not to mention the extras which we do around the holidays provides more activity than we are aware.

Today I had to catch up here at home with some work, so I was only able to do a: 1 mile walk/20 minutes.
emoticon I figure some days will be like that and that is okay. I need to just "Keep on keepin on" as the saying goes.
Logging all food choices and COUNTING POINTS for W8Watchers too (that is the best way) and that makes me accountable.

I would like to become an active participant in this challenge. Unfortunately, I have been delayed by some health issues. Now that I am upright, I am ready to begin.
I am joining because (1)challenges help me maintain my focus
(2) I learn many things from the other participants,(3) I am more willing to try things I might not otherwise attempt.

My goal(s) is to maintain throughout upcoming weeks. I realize there will be challenges I must face which will result in potential fluctations.This brings me to my second goal which is acceptance. I know if I listen to my body, and make positive choices, it will respond as it becomes stronger and healthier. Bottom line: Health-physical emotional and spiritual is my goal. The icing on the cake would be to become a few pounds lighter.

emoticon for sharing your recipe for crustless pumpkin pie. I have a recipe which, after reading yours is identical except that it is called pumpkin whip. It was created to be served in custard dishes.
It is extremely yummy. I had forgotten all about it.
I enjoy pumpkin a great deal, and now that you have reminded me I think I will whip up a batch.
It is good to plan ahead and be ready for your company. Having your fresh vegetables ready to go will make it easier.

How about adding tiny Cool whip on top of each glass, and may be also pinch of cinnamon on top of the Cool whip?
I've never tried it, but it sounds yummy to me.

Thanks Mimi. I will be trying this for sure. I have some glass Irish goblets (shamrocks on them)that I use for company and special desserts. I think this will look very elegant in these also.
I love trying new recipes that are healthy and also
great tasting. Will be fun.

I put it in a nice glass bowl, refrigirated.
Usally, I like to serve it in a wine glass. It looks very elegant and it keeps the portion control under control!

You can also put the nice bowl on the table, and let each person takes as much as they want (less work for you).
If you make please let me know how you liked it.

*** I FORGOT one ingredient! 1 teaspoon of pumpkin pie spice (or to taste)
I added it in the recipe below.

I can't tell you how much I appreciat the time and effort you put into this challenge and into the team in general.
Your answers to each one of us are so encouraging and to the point! You have so much wisdom and experience.

I see a lot of determination in all of you here. The "monster", which is only a piece of metal or plastic, will always follow your healthy habits.

I'm going now to the market to get lots of vegetables and fruits for my children who're coming this Saturday.
Yesterday was a great day and today I'll swim, water exercises and walk outside.

emoticon ALMOST PUMPKIN PIE

Here is one of my favorite dessert. It takes one minute to make it.
2 points per cup

* 1 can (20 oz.) solid pure pumpkin (NOT the pie filling one)
* 1 small package of butternut scotch, sugar free, fat free instant pudding (use as dry powder)
* 8 oz. fat free, or low fat Cool whip
* Stevia or Splenda to taste (optional)
* One teaspoon of pumpkin pie spice (or to taste)

Mix it all well and refrigirate. Great to have for Thanksgiving meal and all year long.

so today was a good day. Even though it was chilly outside, I walked to my class (almost 6 km) and then we came home and made a very good, filling, chilly which has only 5 points. So, good day for moi!

I want to join the challenge for a Healthier Lifestyle, to feel and look better. I want to LOSE during this 8 week challenge. We have company coming in from Ireland and have lots of eating together, which is always harder when out with others who don't count or write their food down. I will continue to exercise 5-7 days a week and sleep at least 7 hours a night, follow the 9 healthy guidelines. Will be making some favorite recipes from my great W8Watcher books. I know somedays it will be harder than others. I will talk about the struggles and the victories during thes weeks. Let's keep each other motivated. Thanks Teresa.

Good morning everyone

The "new even more beautiful YOU" by January 1st, 2011.

We are ahead of the "game"!

Time for action.
I'll exercise today, including walking outside.
I'll follow all 9 healthy guidelines.
I'm making today my favorite steel cut oats oatmeal.

I've made a HUGE salad
I have a hand great chopper.
All chopped, except grated daikon and carrots

Tomatoes
Cucumbers
Daikon (grated)
Green onion
Lots of parsley and fresh baby dill
carrots (grated)
red pepper (on sale)
Yellow pepper (on sale)
NO salt
Tiny fresh black pepper

When I want to eat it, I only then add 1 teaspoon of olive oil and lemon juice.
Yum! Yum! Yum!

I'd love to join this challenge. Eight weeks doesn't sound like a long time, but it is. You can do lots of damage in 8 weeks, so I figure you can do lots of good too.

My goal would be to lose a few pounds. Even just 5 would be great!

I would like to also join for the full 8 weeks.
I have never been very successful at maintaining my weight, or strength, for very long at a time. I plan to change that with this challenge. I will eat healthy foods, not only to maintain but to lose when it's my time to break free of the plateau.

I plan to incorporate weights into my fitness plan as much as possible. In doing so I will maintain the strength in my arms and core over the winter months, this will also help with my golf game this coming spring. I still plan to walk and hike as much as possible in the next 8 weeks.

This is going to be a challenge but.. I can succeed emoticon .

I will be making Brussel Sprouts, per a request for the holiday. So Hoping I can find a roasted receipe for these.

Thank you, Teresa, for leading such an important challenge.

The first progress I'm making, is joining this challenge for the FULL 8 weeks.

emoticon If I stick to the full 8 weeks, can I get a ribbon or a gold star at the end...smile.... or maintaining my weight will be my victory?(being on maintenance)

My goal is to maintain. Not to lose and not to gain.
I'll be very busy with company, but I'll still eat healthy and serve healthy meals.

When January 2011 will come, I will not have to make any new year's resolutions.
