I always start my morning with fruit. This morning it was a small banana (1 pt). Hubby fixed us each an egg and sausage sandwich made with EggBeaters and Jimmy Dean Turkey Sausage pattie on an Arnold's Thin Sandwich (3 pts). Along with that we had a cup of mixed berries (1 pt.) I also had a half cup of soy beverage (1 pt) That makes a 6 point breakfast.

I had 20 g. of protein and 14 g. of fiber.

Lately I've been doing the almost the same recipe over the stove instead of the crockpot. It is crunchy with a wonderful nutty taste.
I only use Arrowhead Mills company, Organic Steel Cut Oats hot Cereal (in a 24 oz. box) because it has the highest fiber per serving (8 grams )than all other brands in the market, it takes only 8 minutes to cook and it tastes delicious.
I cook it exactly according to the box directions, but I add peeled, cored, grated apples to it.
Absolutely a treat with soy milk or skim milk!

CROCK POT STEEL CUT OATS WITH APPLES AND PEARS

NOTES!
1. you can make a smaller amount.
The amount of water has to be 4 times the amount of oats.
Example:
For 1/2 cup steel cut oats, use 2 cups water
2. This recipe makes enough for the whole week.
3. You may add raisins, dated, or other dried fruits , stick of cinnamon, pinch of Cardamon, if you wish, while counting your points(calories)
4. I like to eat it hot with vanilla soy milk (you can use skim milk)
5. It fills you up (high Fiber: 8 grams per 1/4 cup dry steel cut oats plus high fiber in apple and pears)
6. I add splenda to taste and cinnamon
7. Cecile adds to this (after cooking) 1 tsp. peanut butter and 2 TBS, cottage cheese. I've tried it and it's absolutely DELICIOUS!

INGREDIENTS

4 pears, peeled, seeded, and cubed
4 apples, peeled, seeded, and cubed
1 1/2 cups steel cut oats (I like the organic Steel Cut Oats Hot Cereal by Arrohead Mills)
6 cups water

METHOD
Put everything in the slow cooker and cook for 6-8 hours on LOW.
Refrigirate.

OTHER IDEAS!

3 1/2 cups skim milk
3 1/2 cups water
2 cups steel cut oats
2 cinnamon sticks

Cook on low 4 hours

If you don't want to do it in the crockpot:
1 cup steel cut oats
4 cups water

pour water and sco into large saucepan, bring to rolling boil, cover, remove from heat and let sit a few hours (or overnight) until water is absorbed.
When the majority of the water is absorbed, I add cinnamon then divide up into small bowls for easy reheating during the week.

You can add bananas or spiced apples before you reheat.
You also can add 1 tsp of oil and some sf coffee flavoring at this time, along with a splash of fat free milk.

Spiced Irish Oatmeal
6 servings

3 cups water
1 cup steel cut oats
1 tablespoon brown sugar substitute
1/4 teaspoon ground cinnamon 1/8 teaspoon salt
1/8 teaspoon ground allspice
1 dash ground cloves or ground nutmeg 3 cups nonfat milk

Combine ingredients. Cook on low setting in crockpot 4 hours.
Makes 3 cups (six 1/2-cup servings).

I had steelcut oatmeal again today. Mimi gave me the idea to precook it in bulk once a week to save cooking time and to make life easier. So I modify the recipe to make 6 servings, and I divide the oatmeal equally among 6 bowls as soo as the oatmeal finishes cooking. It is very liquidy then, so my trick is to do it before it gets sticky and firms up.

I also don't want the temtation of having too many choices for myself for breakfast. My tastebuds don't get too excited with having only a couple of choices for each meal.

One serving of steelcut oatmeal: 2 points; 1 cup fresh sliced strawberries:1 point; 1/2 cup skim milk: 1 point; cinnamon and splenda: 0 points; 2 cups decaf tea with 1/2 cup skim milk: 1 point.

Total points for a hearty, filling breakfast: 5 points.

I had a snack of 1% cottage cheese and 1 1/2 cups carrots, 3 hours later.

6gm fiber

I, too, use the old exchange plan. The new guidelines just appear to me to place more emphasis on the "healthy" part. I have taylored it to meet my needs. I tried the point system when it first came out, but as I grew up with the "old plan" I found it easier to adapt to meet my special dietary needs.

I had 1 cup blubberies (1 point), 1 cup strawberries (1 point) , a large salad with tomatoes, cucumber, peppers and onions (0 points), 1 slice of whole-grain bread (1 point), 1 cup fat free plain fage yogurt(2 points) and coffee, of course, but DECAF (an improvement!)
A HUGE breakfast! I tried to eat breakfast like a queen.

Total: 5 points for a HUGE breakfast
Protein: 20 grams
Fiber: about 10 grams

Here is the bean recipe I mentioned yesterday.

Microwave Thrkey and Three Bran Chili
From a Bean For All Seasons
A Cookbook from the Michigen Bean Commision

Serve 12
Per sereving:
1 1/4 cups
22 g protein
31 g carbs ( the good carbs!)
945 mg with canned beans, 593 mg with cooked dry or no salt bean cans
14 g fiber ( I add extra red peppers, so the fiber is higher)

* If you follow the notes below, one cup is only 2 1/2 points.

Notes!
1. It's a microwave recipe but I prefer to cook it over the stove. I get the onions and peppers to camalized well over the stove.
2. I substitute 1 can of VEGETARIAN BAKED BEANS (with spices and sugar) for one can of beans. A little extra calories and sugar, but the taste is hevenly and it's well worth it!.
3. I like to use two canned ROTEL diced tomatoes and green chilies instead of the canned diced tomatoes AND the salsa.
The combination of the spicy rotel tomatoes and the vegetarians baked beans is wonderful.
4. In addition to one green pepper, I add 5 large red peppers (extra fiber and extra volume without the additional points (calories).
I do the same with the onions. I use 3 HUGE onions instead of one ( I like vidalia onions)
5. I change often the beans I use. My favorite beans are baby butter beans.

INGREDIENTS OF ORIGINAL RECIPE

1 lb ground turkey breast
1 green pepper chopped
1 small onion, diced
1/2 teaspoon minced garlic
1 jar of salsa (your choice on heat) (16 oz.)
1 can diced tomatoes, no salt added (28 oz.)
2 cups kidney beans, cooked, drained and rinsed (1 can 15-16 oz.)
2 cups black beans, cooked, drained and rinsed (1 can 15-16 oz.)
2 cups navy beans, cooked, drained and rinsed (1 can 15-16 oz.)
2 TBS. flour (I don't use flour in my own recipe)
1-2 teaspoons chili powder, depending on the taste
1-2 teaspoons cumin, depending on the taste (I use 2 TBS. cumin)

METHOD

Combine ground turkey into 3-quart microwave casserole. Add peppers, onions and garlic. Cover loosely with plastic wrap and microwave on high until turkey is no longer pink (approximately 8 minutes), stirring after 4 minutes. Drain and stir in remaining ingredients. Cover and microwave an additional 15 minutes, stirring every 5 minutes, until boiling.

In the 17th century, it was thought that beans possessed magical powers, and were used to cure everything from colds to baldness.

I am impressed by anyone who actually prepares and cooks a breakfast.

Today I had an egg sandwich, and a bowl of blueberries and yogurt.

I'm getting ready to run an hour, so my breakfast was a fairly large one.

I sauteed spinach, mushrooms, garlic and onion in 1 tsp. olive oil. I then fried up 1 egg and 1 egg white in the pan, then added the veggies (as an omelette). I put a slice of fat free cheese on it and melted that. For carbs I had a 1/2 cup of fiber one cereal and an Olde Hearth Multi Grain English Muffin.

Calories were 329
Protein was 26 grams
Fiber was 20 grams.

I'm ready for my run!
