Give everyone a favorite Fruit or Veggie recipe that begins with the Letters A - B - C. Remember that's what this months Sparks Calendar is about.


C.......Creamed Cauliflower

Nutritional Info (Per serving):
Calories: 85, Sodium: 219mg, Dietary Fiber: 4g, Total Fat: 1g, Carbs: 9g, Cholesterol: 3mg, Protein: 10g SERVING 4
Exchanges: Vegetable: 1, Lean Meat: 1
Carb Choices: 0.5


Ingredients
1 1/2 pounds cauliflower
1 tablespoon parsley, fresh
1 cup(s) cottage cheese, low-fat
1/4 teaspoon butter granules (such as Butter Buds)
Preparation
1. Cook, drain, and mash cauliflower. Combine with the rest of ingredients.

2. Spoon into baking dish coated with nonstick cooking spray. Bake at 350 degrees F for 30 minutes.
