Fruit nests - Cut sheets of phylo pastry into 2 or 3 strips per sheet, gently press the strips into oven-proof bun tins, and bake until they are lightly toasted. Open a can of fruit in juice & serve in the phyllo nest with some juice dribbled over the top. Assemble them at serving time so the phyllo will not get soggy. Serve with lo-fat icecream if you have spare points! Yum!

Chocolate-Kissed Strawberries

Ingredients:

2 ounces 60% bittersweet chocolate
1 pint strawberries

Preparation:

Rinse fruit well. Do not remove stems. Blot dry with a paper towel and set aside.
Melt chocolate in the top of a double boiler, stirring constantly. When chocolate has melted, remove top portion of the double boiler.
To coat strawberries, hold one at a time by the top and dip into chocolate. Coat completely except for stem area.
Let cool.
Yield:
4 servings

Nutritional Information:
Per serving (1/4 recipe): 123 calories, 2 g protein, 19 g carbohydrate, 5 g fat, 4 g saturated fat, 1 mg cholesterol, 4 g fiber, 3 mg sodium. Calories from fat: 36.

Another idea: Chocolate brownies
Buy low fat brownie mix and use apple sauce (about 1 cup) or solid pumpkin(small can) instead of one stick of butter when baking.

Valentine's day dessert

This is fresh, fruity and light and it has very low calories and almost no fat!

Serving size: 1/2 cup
Serves: 6
Back to Desserts

1 (.3-ounce) package sugar free strawberry flavored gelatin
1/2 cup water
1 1/2 cups sliced fresh strawberries
2/3 cup instant nonfat dry milk powder
6 ice cubes

Combine gelatin and water in a small saucepan, stirring really well; let it stand for 1 minute. Cook over low heat, stirring continuously for 1 minute or until the gelatin is dissolved.

Combine the gelatin mix, strawberries, and milk powder in the container of an electric blender; cover and blend until it appears smooth. Add your ice cubes, one at a time, mixing until blended thoroughly.

Spoon mixture into 6 parfait glasses. Cover and chill.

Per Serving: 65 Calories
trace Fat (3.2% calories from fat)
6g Protein
10g Carbohydrate
1g Dietary Fiber
3mg Cholesterol
103mg Sodium
Exchanges: 0 Lean Meat; 0 Fruit; 1/2 Non-Fat Milk.
