i like to bake a potato and then scrape the inside out.( you can save it for another time or give it to the kids as mashed potato.) then i steam or microwave broccoli or mixed veggies and chop them very fine. spray the inside of the potato skin with fat free parkay. spray the veggies with ff parkay and a 2 tsp goo romano. put veggies in potato skin and top with 1/2 slice of low fat provalone (25 cal.). microwave for 25 second til cheese soft and enjoy. good fiber, low fat and tasty.
instead of the romano you can mix the veggies with a wedge of low cal. laughing cow cheese with garlic.
