Vanilla Beans

Vanilla beans are the seed pods of a kind of orchid. When they are grown outside Mexico, they need to be pollinated by hand. Vanilla has a strong, aromatic smell and is used in many different sweets, particularly icecream. The part of vanilla that makes the flavour can also be made artificially, and is a lot cheaper than natural vanilla essence.

UGLI FRUIT

The ugli or ugli fruit is a Jamaican form of tangelo, a citrus fruit created by hybridizing a grapefruit (or pomelo), an orange and a tangerine. UGLI is a registered trademark of Cabel Hall Citrus Limited, under which it markets the fruit. Its species is Citrus reticulata × Citrus paradise.

It was discovered growing wild (possibly having developed in the same way grapefruit was created in Jamaica, where it is mainly grown today.[5] The name is a variation of the word "ugly", which refers to the fruit's unsightly appearance, with rough, wrinkled, greenish-yellow rind, wrapped loosely around the orange pulpy citrus inside.

The light-green surface blemishes turn orange when the fruit is at its peak ripeness. A tangelo fruit is usually slightly larger than a grapefruit (but this varies) and has fewer seeds. The flesh is very juicy and tends towards the sweet side of the tangerine rather than the bitter side of its grapefruit lineage, with a fragrant rind. The taste is often described as more sour than an orange and less bitter than a tangerine, however, and is more commonly guessed to be a lemon-tangerine hybrid. The fruit is seasonal from December to April. It is distributed in the United States and Europe between November and April and is on occasion available from July to September.

Tomato Truss

Tomatoes are descended from the wild tomato that grew in the lower Andes over two thousand years ago. The tomato is related to the deadly nightshade family along with potatoes and tobacco. Truss tomatoes have a smooth, glossy skin and juicy flesh containing numerous soft, edible seeds. They are bought with wine still in tact.

Tomatoes are rarely categorised by variety but distinguished by mainly by shape.

Truss tomatoes come in all shapes and sizes.

Tomatoes will continue to ripen off the vine but the flavour is compromised.

Note: the salicylate content in fresh tomatoes is relatively low, but canned tomatoes and processed tomato sauces have high levels of this compound.

Redcurrant

The redcurrant, is a member of the genus Ribes in the gooseberry family, native to parts of western Europe (Belgium, France, Norway, Sweden, Germany, Netherlands, northern Italy, northern Spain, Portugal and Poland). It is a deciduous shrub normally growing to 1-1.5 m tall, occasionally 2 m, with five-lobed leaves arranged spirally on the stems. The flowers are inconspicuous yellow-green, in pendulous 4–8 cm racemes, maturing into bright red translucent edible berries about 8–12 mm diameter, with 3-10 berries on each raceme. An established bush can produce 3-4 kilos of berries from mid to late summer.

Radicchio

Radicchio is a lettuce that looks very similar to a red cabbage. The leaves are much softer than a cabbage but more robust than most other lettuce leaves. It is a very bitter vegetable you either like it or loath it

Dandelion

Dandelions are enjoying their true place in the world as a beneficial, restorative plant. Often used to make wine, dandelion leaves can also be eaten, but it's the roots that are now widely known as a coffee substutute. (Don't be fooled - it tastes nothing like coffee.)

A pretty plant with a yellow flower that makes way to a ball of delicate plumed seeds that are blown off by the slightest breeze. Children love to tell the time by counting the number of blows required to blow off all the seeds.

Babassu Oil

Babassu oil or cusi oil is a clear light yellow vegetable oil extracted from the seeds of the babassu palm (Attalea speciosa), which grows in the Amazon region of South America. It is a non-drying oil used in food, cleaners and skin products. This oil has properties similar to coconut oil and is used in much the same context. It is increasingly being used as a substitute for coconut oil. Babassu oil is about 70% lipids.

Zwieback

Zwieback is a form of rusk eaten in Germany, it is a type of crisp, sweetened bread, made with eggs and baked twice. It originated in East Prussia. The Mennonites brought Zwieback to the Russian Empire; during and after the Russian Revolution, when many fled, they brought Zwieback to Canada, the United States and other parts of the world.
It is sliced before it is baked a second time, which produces crisp, brittle slices that closely resemble melba toast. Zwieback is commonly used to feed teething children, and as the first solid food for patients with an upset stomach.
The name comes from German zwei ("two") or zwie ("twi-"), and backen, meaning "to bake". Zwieback hence literally translates to "twice-baked".

Yellow wax pole beans

The yellow wax pole bean plant (Phaseolus vulgaris), a variation of the snap bean, produces 6- to 8-inch long yellow, waxy bean pods. The plant usually reaches a height of approximately 6 to 8 feet. The plant matures quickly, with only 55 to 60 days before harvest can begin.

Worcestershire sauce - sometimes shortened to Worcester sauce, it is a fermented liquid condiment, primarily used to flavour meat or fish dishes.

First made at 60 Broad Street, Worcester, England, by two dispensing chemists, John Wheeley Lea and William Henry Perrins, the Lea & Perrins brand was commercialised in 1837 and has been produced in the current Midlands Road factory in Worcester since 16 October 1897.[

It was purchased by H.J. Heinz Company in 2005 who continue to manufacture and market "The Original Lea & Perrins Worcestershire Sauce", under the name Lea & Perrins, as well as Worcestershire sauce under their own name and labelling. Other companies manufacture similar products, often also called Worcestershire sauce and marketed under different brand or private label names. Additionally, in recent years recipes have begun appearing for homemade variations of the British version.

Worcestershire sauce is made with anchovy and is therefore not suitable for use in strictly vegetarian dishes. It is often an ingredient in Welsh rarebit, Caesar salad, Oysters Kirkpatrick, and sometimes added to chili con carne, beef stew, hamburgers, and other beef dishes.

Worcestershire sauce is also used to flavour cocktails such as a Bloody Mary or Caesar. Known as salsa inglesa (English sauce) in Spanish, it is also an ingredient in Michelada, the Mexican beer cocktail.

Verjuice (from Middle French vertjus "green juice") is a highly acidic juice made by pressing unripe grapes, crab-apples or other sour fruit. Sometimes lemon or sorrel juice, herbs or spices are added to change the flavour. In the Middle Ages, it was widely used all over Western Europe as an ingredient in sauces, as a condiment, or to deglaze preparations. It is still used to some extent in the American South.

Tempeh has been a favourite staple in Indonesia since the 16th century. It is a fermented food made from cooked soybeans with a tempeh starter (Rhizopus mould).
Tempeh has a firm texture and a nutty mushroom flavour.

In French it means "four spices." It is a mixture of ground spices usually consisting of pepper, nutmeg, ginger, and cloves. Since there is no standard mixture for quatre epices, the mixture will vary with each chef.

Pomegranate

Pomegranates are bright coral-red with leathery skins. It's believed they originated from Persia or Afghanistan. Like many other foods, the Greeks associated pomegranates as a symbol of fertility. Pomegranate juice was once used as a colour dye. Within the inedible skin are hundreds of bright red juicy seeds with a sweet/sour flavour.

Natto

Natto is a traditional Japanese food made from fermented soybeans. It is rich in soy protein, and phytoestrogens called isoflavones, which some research suggests may help increase bone density and thereby reduce risk of osteoporosis, especially in postmenopausal women. If you have a history of breast cancer, it's always wise to speak with your physician about incorporating soy foods into your diet, although many health organizations and researchers have concluded that moderate amounts of whole soy foods, like natto are perfectly safe. If you experience migraine headaches, be aware that natto may be a trigger, and if you suffer from IBS you may experience discomfort after consuming soy foods.

Mahi Mahi - This is a type of dolphin fish, not to be confused with the dolphin that is a mammal. The Hawaiians named it mahi mahi to avoid this misunderstanding. It is a moderately fatty fish with firm, flavorful flesh and it is usually available as steaks or fillets. It tastes best when grilled or broiled.

Ling

Ling is an extrordinarily ugly fish, which is the reason why you will only ever find it filleted. It grows to about 1.5 metres and 20kg in weight. It is a stong, textured fish with no bones.

Kipper -
To kipper means to cure, usually fish, by cleaning, salting and drying or smoking. It also means a male salmon during or shortly after spawning.

When a herring is kippered it is first butterflies, cured in brine, and then cold smoked. It has a Smokey, salty flavor and is usually given an artificial golden color.

When a salmon is kippered. it is usually a chunk, steak or fillet of salmon soaked in brine, hot smoked and in the U.S. dyed red. In Canada the fishermen I know never add dye colouring to the process but perhaps commercially they do,.

In Europe a split salmon is soaked in brine and cold smoked.

To steep an aromatic ingredient in hot liquid until the flavor has been extracted and absorbed by the liquid. Teas are infusions. Milk or cream can also be infused with flavor before being used in custards or sauces.

Haloumi

Haloumi is a traditional, semi-hard white cheese from Cyprus. It's made from 100% sheep's milk. It's a good cheese for grilling or putting on the BBQ because unlike most other cheeses it retains its shape and will not melt.

They resemble a small cantaloupe and have a light golden-yellow skin when ripe. Their flesh is lime green and tastes similar to a sweet honeydew melon.

Fennel Seeds

Fennel seeds are sometimes confused with those of anise, which are similar in taste and appearance, though smaller. Fennel is also used as a flavouring in some natural toothpastes. The seeds are used in cookery and sweet desserts.

Oddly enough I don't like Fennel bulbs but I like the seeds??

Egg Cream –
Despite it name, the Egg Cream contains no eggs or cream. The basic ingredients are milk, seltzer, and chocolate syrup. Egg Cream will lose its head and turn flat if not drunk immediately or within three minutes. It is perfectly proper to “gulp” an Egg Cream. Soda fountains all over New York City have their own version and the Egg Cream has become a New York institution. For many years, the Egg Cream remained a product sold only through New York soda fountains. It is being bottled now by a couple of small companies. True New Yorkers insist that it is not a classic Egg Cream without Fox’s U-Bet Chocolate Syrup.

Za'atar

Zaatar is a generic name for a family of related Middle Eastern herbs from the genera Oregano, Basil, Thyme, and Savory). It is also the name for a condiment made from the dried herbs, mixed with sesame seeds, dried sumac, and often salt, as well as other spices. Xanthan gum is a polysaccharide secreted by the bacterium Xanthomonas campestris,
used as a food additive and commonly used as a food thickening agent (in salad dressings, for example) and a stabilizer (in cosmetic products, for example, to prevent ingredients from separating). It is produced by the fermentation of glucose, sucrose, or lactose. After a fermentation period, the polysaccharide is precipitated from a growth medium with isopropyl alcohol, dried, and ground into a fine powder. Later, it is added to a liquid medium to form the gum.

Watermelon -

Watermelon has been popular throughout the world, beginning with the Egyptians more than 5,000 years ago. It is said that explorer David Livingstone found watermelon vines in the Kalahari Desert in the 1850s.

Many historians theorize that watermelons could also have originated in the U.S., since French explorers found Native Americans growing watermelons in the Mississippi Valley.

According to a number of sources, watermelon ripeness is primarily determined by three things: the fruit feels heavy for its size, its skin has a healthy sheen, and the underside of the fruit (where it sat on the ground) has turned a pale, buttery yellow.

Vegetable spaghetti

Also known as spaghetti squash this is the dieters godsend. Low in carbohydrate and looking like spaghetti it can be used as a fat free, gluten free base for pasta sauce. Vegetable spaghetti is a good source of vitamins and minerals including B vitamins, potassium and manganese, provides vitamin C and fibre.

I love this just as a vegetable, I have some seeds to grow them again this year

Tuna

Tuna is a very meaty fish, delicious raw (sashimi style) or cooked. Yellowfin and Bluefin tuna are the most sought-after for sashimi. Tuna are large fish high in the food chain. Some reach up to 100kg.

I'm not a fan of fresh tuna but love canned tuna ....... go figure!!

Nasturtium

Nasturtium originally came from Peru and were brought to Europe by the Jesuits in the 16th century. Nasturtium is a climbing plant, with large round leaves and bright red, orange or yellow hooded flowers. Both flowers and the leaves have a peppery taste similar to watercress (cresson).

Lentils

Lentils are pulses and are grown and used extensively in the middle East and India. Bought dried, they can be red, green or brown and are small and disc shaped. Lentils are easier to digest that other legumes, are low in fat, have a low GI, and combined with grain make a complete protein for non-meat eaters. The green lentils or Puy lentils are from France and very expensive. The Australian equivalent are "blue" lentils, and, like champagne cannot use the name, puy.

[German word = from knacken to make a cracking sound + Wurst = sausage]

In America, Knackwurst may refer to a short, plump sausage originating from the Holstein region in Germany. They may contain ground veal, ground pork, and fresh garlic stuffed into hog casings.
The sausages are aged for two to five days, then smoked over oak wood. Knackwurst is often prepared highly seasoned.

Jerusalem artichoke

The Jerusalem artichoke (Helianthus tuberosus), also called sunroot, sunchoke, earth apple or topinambour, is a species of sunflower native to eastern North America, and found from eastern Canada and Maine west to North Dakota, and south to northern Florida and Texas. It is also cultivated widely across the temperate zone for its tuber, which is used as a root vegetable.

I love them they are very sweet when roasted and can be eaten raw where they have a nutty flavour.

Hijiki

A type of seaweed, hijiki is wiry and black, and has a strong flavour. It has brown branches that grow over rocks and bottom of the sea, or like a bush up to six feet high. Plants are cut and sun-dried, boiled until soft and dried again until they are black in colour. Used to flavour stocks, salads, soups, meats and vegetable dishes.

Fenugreek

Native to Asia and southern Europe, This aromatic legume is native to Asia and southern Europe. The long, thin, curved seed pods have earned fenugreek the nicknames "cow's horn" and "goat's horn". The flowers are a rich purple and the florets are seated round a high cone; seeds, four-sided achenes. Root tapering, cylindrical, entire, slightly spiral, longitudinally furrowed; fracture short, fibrous; bark thin; wood, thick, in alternate porous, yellowish and black transverse wedges, and the rhizome has a circular pith.

It has a faint aromatic smell, with a sweetish taste, leaving a tingling sensation in the mouth but without its lasting numbing effect.

---Constituents---Oil and resin both in wood and bark and masses of inulin, inuloid, sucrose, vulose, betaine, two phytosterols and fatty acids, oleic, cerotic, linolic and palmatic.

---Medicinal Action and Uses---

Echinacea increases bodily resistance to infection and is used for boils, erysipelas, septicaemia, cancer, syphilis and other impurities of the blood, its action being antiseptic.

It has also useful properties as a strong alterative and aphrodisiac. As an injection, the extract has been used for haemorrhoids and a tincture of the fresh root has been found beneficial in diphtheria and putrid fevers.

Dill

A pretty, feathery herb with a strong pungent flavour. The French call dill 'fenouil bâtard' meaning "bastard fennel" and the Dutch 'stinkende vinke' meaning "stinking fennel" - neither very complimentary. While dill leaves look and smell similar to fennel they are smaller and more delicate in structure and flavour.

One tablespoon of dill seed contains more calcium than a cup of milk. Green dill tips are a natural partner for smoked salmon, omelettes and scrambled eggs, mayonnaise, tartare sauce and salads. Dill seeds are used in pickles and chutneys, with vegetables and in the exotic spice blend, 'ras el hanout'.

Calas -
Are fried balls of rice and dough that are eaten covered with powdered sugar, not unlike rice-filled beignets.

History:
It is said that long ago, on cold mornings in New Orleans, women would walk the streets of the French Quarter selling these warm fried cakes for breakfast. "Calas! Calas, Tout Chaud!" as the Creole women used to shout when they sold them in the French Quarter of New Orleans.

Black limes

Also called Loomi or Oman Lemons, these whole, dried limes have a wonderful citrus flavour with a richly fermented overtone. The inside dried flesh is black although the outer skin is actually tan or brownish-yellow.

Acidulated water -
It is a solution of 5 to 6 parts water to 1 part acid (typically the acid ingredient is lemon juice or vinegar). Since the flesh of certain fruits and vegetables, such as apples and pears, will darken when exposed to air unless used immediately after cutting, they are dropped into an acidulated water to stop this process.

Zabaglione (written also sabayon, or zabajone, Zabaione, is an Italian dessert, or sometimes a beverage, made with egg yolks, sugar, and a sweet wine (usually Marsala wine, but in the original formula Moscato d'Asti). The dessert version is a light custard, whipped to incorporate a large amount of air. Since the 1960s, in restaurants in US areas with large Italian populations, zabaglione is usually served with strawberries, blueberries, peaches, etc. in a champagne glass. In France, it is called sabayon. It is believed that the name comes from Dalmatia, a part of Croatia, where it is called "zavajun", originating from the Dalmatian dialect which means to "beat", "stir" or "roll", depending on the context.

Vol-au-vent

A vol-au-vent (pronounced [vɔlovɑ̃], French for "windblown" to describe its lightness) is a small hollow case of puff pastry. Vols-au-vent are typically made by cutting two circles in rolled out puff pastry, cutting a hole in one of them, then stacking the ring-shaped piece on top of the disc-shaped piece.[1] This pastry is usually found filled with savory ingredients, but can also have a sweet filling.
The pastry and its catchy name vol-au-vent were invented by Antonin Carême in his pastry-shop opened in the rue de la Paix in Paris in 1803

Tangelo

The tangelo is a citrus fruit originally developed by crossing a grapefruit with a mandarin. It looks similar to a mandarin, although bigger and rounder, with a knob at the top. The tartness from the grapefruit is combined with the flavour, smell and easy-to-peel mandarin. Tangelos have light to deep orange skin.

Parsnip

The parsnip is a root vegetable from the same family as carrots, celery, fennel and celeriac. It is ivory-coloured with a delicate, sweet flavour. It is very popular in England with the Sunday roast.

I love parsnips, I was most disgusted when my parsnips in the garden never came up.

Natto

Natto is a traditional Japanese food made from fermented soybeans. It is rich in soy protein, and phytoestrogens called isoflavones, which some research suggests may help increase bone density and thereby reduce risk of osteoporosis, especially in postmenopausal women. If you have a history of breast cancer, it's always wise to speak with your physician about incorporating soy foods into your diet, although many health organizations and researchers have concluded that moderate amounts of whole soy foods, like natto are perfectly safe. If you experience migraine headaches, be aware that natto may be a trigger, and if you suffer from IBS you may experience discomfort after consuming soy foods.

Maple Syrup

- It is the first finished product made from boiled map of the maple tree. This is the form most widely used in recipes. A maple tree is usually 30 years old or more and at least 10 inches in diameter before it is tapped. Depending on its size, a tree may have from one to four taps, each of which yields an average of 10 gallons of sap each season.

History:
Before the French even colonized the New World; maple sap was already being collected by the American Indians who used it as a sweet beverage. Although they knew how to tap the trees and collect maple sap, their primitive earthenware, however, were not allowing them to boil the sap quite enough to produce maple syrup.

Some historians believe that the American Indians taught the process of sugar making to Europeans; others, rather believe that this discovery can be attribute to a certain doctor named Michel Sarrazin, a military surgeon, who arrived to the Canadian country in 1685. Although nothing proves that he might be the father of sugar making; the fact remains that the maple syrup production spread through the French colony. Maple syrup was considered a precious elixir used as medicine to strengthen the chest.

It is now considered a delicacy in the U.S., but in colonial days it was used extensively as an ordinary sweetener. The Indians taught the first white settlers how to tap Maple trees in the spring, and then evaporate the sweet sap until it became maple syrup.

Leeks

The leek is a member of the same family as garlic and onion. It is the symbol of the Welsh. Leeks are sweet tasting and delicious in soups. Leeks are long and straight, made up of layers of leaves white at the base, ranging to dark green at the ends. Leeks contain kaempferol an antioxidant which helps reduce the risk of cancer and premature aging. The green tops of leeks are also a great source of antioxidants specifically good to help reduce the risk of age related macular degeneration and cataracts.

It is the brand name of a concentrated browning and seasoning sauce. Small amounts of it can be added to gravy to enrich its flavor and enhance its color.

It can also be used to enhance the color of microwave foods, which don't normally brown. There are other brands on the market, which accomplish the same thing.

John Dory

Formerly known as St Peter Fish because of the dark blotches on the sides of the fish, which are supposed to represent the imprint St Peter's thumb made as he took money from the fish's mouth. Many also remark that John Dory tastes like butter, as it simply melts ion the mouth. In actual fact John Dory comes under the group of fish known as Butterfish.
John Dory are found around southern Australia.

Feta

Feta is a Greek cheese traditionally made of sheep's or goat's milk. It's a very salty, white, rindless cheese cured and stored in its own salty whey and brine. Feta dates back thousands of years and is still made by shepherds in the Greek mountains with unpasteurised milk.

I prefer the Danish feta, it's a smoother and creamier cheese

In the history of France, many homes did not have an oven, so anything to be baked was taken to a local baker to be cooked in his oven.

Goats yogurt ewww, I used to have dairy goats and could never stand the taste of goats cheese or yogurt.

Za'atar

Za'atar is a Middle Eastern spice blend that is so versatile! It can be used on meats, veggies, rice, and breads.

Recipe as follows

1/4 cup sumac
2 tablespoons thyme
1 tablespoon roasted sesame seeds
2 tablespoons marjoram
2 tablespoons oregano
1 teaspoon coarse salt

Mix all together in a spice grinder or in a mortar and pestle.

yogurt, yoghurt (YOH-gert) -

The word is Turkish. It is a dairy product made from milk curdled with bacteria. Recipes that most often call for yogurt are East Indian, Balkan, Russian, and Middle Eastern in origin.

Cooks in those areas use yogurt in marinades and sauces. Because of its acidity, yogurt can be used to marinate and tenderize meats (as it often is used in India and the Middle East). Yogurt can also be used to bind ingredients loosely together, as in a sauce or salad dressing.

Yogurts made in the U.S. are made of cow's milk.

Yogurts made in Canada are from cow's milk or goat's milk.

Those of India and the Middle East are more likely to be of the richer goat, sheep, or yak milk.
