Sorry, I've been out. M-I-L broke her hip - living at the hospital lately. I do bring a large salad with thin carrots - so I don't crack another temporary crown!! And sit with mom, it helps her to eat too. When the world slows down a bit, I'll be back to chatting more. Sounds like you are all doing well. I miss the visits. For those of you with pets, hope you got to visit my "A Merry Christmas to Pet's" Blog - it's silly but I think cute. I also did a Santa's diet too. Yesterday I had lettuce on a sandwhich for lunch along with some I know,I know but are still a vegetable. I had califoria blend veggies, and cauliflower, with dinner. For fruit I had a and an apple(why no emoticon for apples?) Today I had a with breakfast. I went to a fundraising luncheon and had Swedish meatballs,mashed and mixed veggies. Great challenge. I encourage everyone to keep it up!

Thanks, Minimoe. :) I am learning to be more adventurous. Some things just come together, and others are tweaked from recipes I find.
I made lentil burgers yesterday and that was a new adventure. I've been eating lentils for about a yr. now, but never homemade veggie burgers. It had grated , green , black olives, and spices. I served them on flatbread wraps with homemade Greek Yogurt Sauce (super low cal -19 cal for 2 tablespoons) - made with grated cucumber, a couple crushed cloves of , some green and fresh dill.
Tonight we were out shopping and I ate @ Firehouse Subs. I haven't been to a burger joint for 19 days (as part of kicking my fast food habit), so eating out was a splurge. I ate a turkey breast "Engineer" sub on wheat w/ and a dill pickle spear. It was pretty lo-cal and low sodium.

Oops missed 3 days of veggie reporting. Blame it on the busy-ness of the season
Anyway, have had spinach & mushroom salad, almost 2 lbs carrot sticks, peas, peppers, a mashed up mix of cabbage, turnip, potato & cauliflower, not to mention onions & celery (deep breath) & finally today: mushrooms, cauliflower & green beans so far.
Wow, SMARTIN77 you are one creative cook! Planning and variety are the keys to success.
We eat veggies at every meal,but, being somewhat isolated up here in the frozen North, we depend heavily on what's been "put by" from the garden. I have potatoes, squash & pumpkin in the root cellar, home canned beets, green beans & salsa, and zuchini, carrots, corn, asparagus and peas in the freezer.

I planned my meals for today, though I reversed lunch and dinner. Lunch I had Spicy Pepper Penne w/ Beans (my recipe recipes.sparkpeople.com/recipe-detail.asp? recipe=2308052 ) It had (red onion & green onion) and white and red beans. Mmmmmm. I served it with 4oz. pork chop with balsamic vinegar, honey, onion & garlic marinade.
Tonight, baked tilapia with green curry soup (marinade-has chilis and basil leaves in it). Has a spicy kick. Serving on bed of power greens (spinach, bok choy, chard)
Carrot Juice Fruits: Orange Juice w/ cereal and Fresh apple with PB for snack
I made a big pot of squash/tomato soup this morning. I have enough to eat off for 5 different times. Today I will have my first serving for lunch.

I had a 6" chicken teriyaki sub at Subway for supper last night with lettuce, onions, peppers, cucumbers and black olives...Yum! (They were out of tomatoes :()
I didn't post my veggies yesterday...busy kind of day but I did manage sprouts, raw green beans, sprouts twice, carrots. Plus fruit....which I tend to eat too much of I think. I've kept up on my goodie giving. Today I think I'll make up some broth with frozen veggies with and egg sandwhich for lunch. Bought a lovely spaghetti squash to have with chicken for dinner. Planning on edamame as an evening TV snack.

Beni, I just realize I wrote "filling" instead of feeling...oops....that was a totally unintended pun. meant to say: Hope you're not feeling to much discomfort. :)
I recently bought some endive, which is a small Belgian lettuce. I've mostly only eaten iceberg or romaine, so this was a new adventure. I wasn't sure what to do with it. It can be chopped up in salads, but you can also make mini appetizers with it. I had a leftover rice which I mixed with some shredded cheese, salsa, and black beans melted together. I warmed it up and put on the chilled endive leaves. It felt like a gourmet meal, and the hot and cold complement each other. I also made the same mixture and made lettuce wraps with romaine lettuce...also good.
Today: I ate the heart-healthy meal suggested by Spark. Brown rice (which I had already prepared) with chopped broccoli . I added some pre-chopped cabbage green and red . A few carrot strips as well. I cooked everything in a cup of vegetable broth instead of the recommended butter. At the last minute I added 2 oz. of carrot juice (my new secret weapon) for flavor and nutrients. It added a nice color to finished product. I spiced it up with some Mrs. Dash, yellow Thai curry, ginger, etc. The sliced almonds gave it a nice crunch and help me feel full. It made a LOT...a whole dinner plate full.
It felt good to eat a healthy dinner. I blew too many calories and sodium mg's on 2 slices of pizza earlier. The veggie dish was fresher and more delicious by far.
Colleen, You know what I love to do with wraps? In the produce section there are packages of shredded cabbage, broccoli, carrots - I think it's called Broccoli Slaw. I put that on a wrap with balsamic dressing (just a small amount is needed) and wrap it up. YUMMY - I could eat 4 of them. I don't of course!!

Yes, you are right IAMAGEMLOVER, you have to see how much veggies are in a serving of whatever you are eating, so eventho you are eating 4 different veggies, you may not get a serving, so you have to make sure you are getting your servings in too :)

Today I'm feeling like a big salad for lunch....with lots of sprouts....LOL....I'm being overrun by sprouts. I bought myself a gifty a few weeks ago...a sprout house and a sampler pack of seeds. Today in my garden: Alfalfa is half gone..enjoyed it in place of rice last night plus picked on it while watching tv broccoli sprouts are ready and very tasty, I'll have those in my salad for lunch red clover sprouts are one day from being ready (did I mention I'm being overrun with sprouts) dill seeds have not sprouted, this is a second attempt at these...maybe i got duds Chick pea sprouts are starting to open Black Sunflower seeds seem to be slow...a good thing at this point! What veggies are you planning for today?

I have a question. When you have vegetable soup or stir fry I was told that is one serving of vegetable. Even though you might be eating 3 or 4 different vegetables, you are not getting a serving of each vegetable.

BigRedAngel for letting me know about this challange. mmmmmmmmm I have been eating a lot more veggies lately. I had a ham and turkey salad with dinner last night and had a lettuce and carrot salad with my garlic chicken breast for lunch today as well as snacked on some baby carrots and drank a can of vfusion( can't drink the regular V8,but I like Vfusion.) I had chicken lo mein and fried rice both of which include vegetables for dinner.Pretty good start and I also gave veggie goodies to several teammates. Check in with you tomorrow.

I hope its not too late to join this challenge....today was a real high veggie day for me....question...are seeds considered veggies? Pepitas in cereal for breakfast had a v8 drink with lunch which was just chicken only dinner was stir fry with yellow peppers, green beans, onion, bok choy, bean sprouts and chicken I used alfalfa sprouts in place of rice. I'm having fun growing sprouts.
almost forgot dessert, butternut squash "souffle" the soulffle did not souff but it was a recipe made with coconut milk and eggs in muffin tins.....with splenda...tastes like pumpkin pie filling...I also made a "regular" pie for my skinny boys...and one of their buddies...none of them had a clue that the pumpkin pie was made with butternut squash

I had the best lunch today! Lettuce leaf wraps loaded with shredded carrot, cabbage, onion, cucumber and a layer of tuna salad, and an orange. I acutally wanted it, loved it, and am thinking tomorrow some turkey breast instead of tuna would be fantastic........or mmmmmmm some chick peas, with all the veges and some feta cheese, oh boy, good lunches coming up for me!

I truly love vegetables so this is not hard. For lunch and supper today I will have some tomato sc. with celery, carrots, lettuce with onions salad, red cabbage with red onions, nopali cactus salad, and brocolli.

Colleen - so glad I got your sparkmail this morning. I usually don't go to the main team pages and look at challenges so I didn't know about this one.
This is great. It certainly will be a challenge and not so mini! I have vegetables but only at dinner. I do eat fruit throughout the day, so this will force me to step up my game in veggieland! Thank you.

Okay, so I am taking... #1) Eat at least (at least? whoa) 4 veggies a day and post on this thread. #3) Post emoticons when posting on team threads.
I'll occasionally give out a veggie goodie here and there. ...And maybe even try a recipe now and then.
Thanks for the push to not only a thinner but healthier me!

Oh! I already had V8 juice this morning. I had cauliflower and spinach (pretend this is a spinach leaf ) both for dinner last night.

Sorry, I don't eat a lot of vegetable. I do get 5 servings a day of freggies. It is mostly fruit though.

OK, yesterday I had: 2 egg whites with 2 cups power greens (baby spinach and baby swiss chard) with some diced . I had a shot (2 oz.) of Bolthouse Carrot Juice which I've been trying to drink daily...just 2 oz. is 175% of daily value for Vitamin A!
For Dinner I made a "Hamburger Buddy" recipe with shredded and diced .
I snacked on some toasted seeds and I had a small serving of sweet potatoes with pecan topping for dessert.
I have done #1...I had celery with PB for breakfast, and a mix of lettuce, carrots and cabbage in a salad for lunch :) had green beans with supper :) #2...done #3...been doing it #4...Eat your veggies team!!

Veggies are IN this week!! The VEGGIE Challenge will be to do THREE or more of the following mini challenges:
