you donīt say what your usual salad is?
my favorite is a colwslaw. i make it with one apple,two carrots,two onions,some drumhead cabbage,(grate or shread all the above)add a handful of chopped nuts of your choice and a handful of lowfat grated cheese.(last two optional) and mix all together with a mayonaise/yogurt dressing or with a oil/lemon/herb dressing.my kids like it only dressing.you could also add great pepper,kohlrabi or what ever vegtables you have to hand,could also add raisins or dried cranberries.
my sons favorite salads are
cucumber(sliced really thin and served in a yogurt/lemon/mint dressing
apple and cucumber salad(both grated together with a squeeze of orange juice on them
tomatoe,cucumber and chilli peppers with red onions.chopp all together and sprinkle some lemon juice and mint over it
then you have also the rice or noodle or cous cous or bulgar or potatoe salad.
another favorite of mine is green bean and potatoe salad.cook the veg stir in some low fat cream or greek yogurt and mix in a mix for salads(dill mix is good)mix and cook on low till the cream or yogurt has thickened.delicious serves hot or cold.
