Here's my go to salad at the moment. 3-4 large tomatoes, 3-4 stalks of thinly sliced celery, 1 or more thinly sliced, peeled cukes, a Bermuda onion finely chopped and about 1/2 C Bernstein s Lite Cheese Fantastico dressing. Serves 6-8. It helps me keep up with the tomato plant that has taken over my front yard. If you're feeling decadent add some chopped Kalamata olives. For a main dish add some thinly sliced beef or chicken breast. Other good additions are cannelini beans or cooked cracked wheat. Possibilities are almost unlimited. We like a sort of vinaigrette which the above mentioned dressing is, but I'm sure any dressing is fine. alyssa emoticon

We've been loving the homemade ranch dressing...1 cup ff plain greek yogurt, 1/3 cup 2% milk and 1 pkg of ranch dressing mix :)

I tried a dressing today that I saw was on the Biggest Loser Salad...olive oil, lemon juice and honey...didn't care for it at all emoticon I'll just keep trying...

I cut salad into small quarter inch pieces for my hubby cause he has bad teeth. it's the only way he'll eat it. It might be an option for those who have dentures as well. I also grate harder salad options, like radishes and carrots.

I wear dentures full set and can't for the life of me eat a salad. I have trouble with many foods. That is why you won't see me eating out often. I miss my salads.

I've noticed some of you put fruit on your salads?? I have heard of it, but never thought of doing it...I may have to try, it just seems foreign to me LOL

And just a vinegar and oil dressing? Like how much? Or lemon juice? See a lot of things I never thought about LOL

I am picky with dressings too, so I guess that's why Ive stuck to the same ones...but as I said, getting bored so may have to venture out of my box :)

I use baby spinach or organic romaine most of the time. If I am trying to cut back calories then I'll leave several of these things off but it sure does make a salad taste good! I have used those little french's fried onions, cheese, croutons, sunflower seeds, and dried cranberries. But since I'm watching calories I use just cranberries, fat free feta cheese, and croutons....the key is onions...red onions. And I use a yogurt based ceasar dressing. It's pretty light on the calories and I don't need a lot anyway. I never liked salad dressing until I tried Olive Garden's...then started trying other Italian dressings, and then finally liked parmesean cheese dressings and Ceasar. Still haven't ventured out and really liked any other kinds yet. Tried French but wasn't really feeling it. lol :) emoticon emoticon emoticon

I'm not much of a salad eater but my favorite is a base of mixed greens, about 2 cups, slices of cucumber, sliced grapes, golden raisins, shredded carrots, couple slices of tomato and 3 ounces of chicken. Sometimes I add apples, pears or oranges. I'm not a fan of any dressings so I used lemon or orange slices and squeeze the juice on.

Which came first, the tornado or the travel trailer??

Today's lunch salad will include: 4 cups of mixed salad greens, 1 fresh sliced pear, 2 tsp reduced fat bleu cheese, 1 Tbsp chopped walnuts, 1 teaspoon olive oil and a splash of white wine vinegar

My usual salad is bagged salad mix with a little cheese, some sort of meat (chicken or turkey ham usually), a few small croutons with light ranch dressing...I love cucumbers but our fridge is weird and freezes them :( sometimes I add egg and tomatoes but that's it...I usually don't think of other things to add til after someone suggests them lol I read somewhere today where a nutritionist suggests eating a salad a day so was trying to think of ways to mix mine up and couldn't so thought Id ask for some help lol

I'M NOT A BIG FAN OF LETTUCE OR GREENS FOR THAT MATTER. I DO EAT THEM BUT I LIKE TO CHANGE UP THINGS ONCE IN A WHILE.....

One of my favorites is our frozen salad.....
The Calorie count will lessen if you use a sugar substitute. I have issues with artificial sweeteners so we use regular sugar.

Frozen Salad
1 (11 oz) can MANDARIN ORANGES - drained and chopped
(8 & 3/4 OZ) crushed PINEAPPLE - drained
(1 cup) COTTAGE CHEESE - curd size optional
1 (2oz package) DREAM WHIP
(1/2 cup) MILK
(1tsp) VANILLA
(1/3 cup) MIRACLE WHIP
1/4 cup SUGAR

Combine FRUIT & SUGAR. Mix well.
In a separate bowl, combine COTTAGE CHEESE, DREAM WHIP, VANILLA, & MILK. Beat until you have a smooth texture.
Fold the FRUIT & SUGAR mixture into the COTTAGE CHEESE bowl then add the MIRACLE WHIP and stir well. Pour complete mixture into flat freezer safe square pan and smooth level. After the mixture has partially frozen, slice into square pieces and continue to freeze until solid. Serve straight from freezer

I love salasd but I usually do the same one everyday I love all the variety everybody comes up with I can stop eating a boring lunch now.

I do a salad every work day for lunch. I also use a bag salad for a base. It varies from iceberg to greener, to romaine, to Very Veggie. I try to add a few sliced or quartered radishes, a few grape or cherry tomatoes, or a sliced Roma. Then I add a half cup of cooked dry beans. Usually canned, and super rinsed and drained. (Sometimes I add 2 TBSP of chopped English walnuts.) I used to use Kraft Red wine vinaigrette light done right, but can no longer find it in stores. It is very fresh tasting. So now subbing Wishbone Red wine vinaigrette. That shake well and I divide equally between two bottles, add an extra 1/2 cup of red wine vinegar to each, and a couple TBSP of water to each. There is plenty of oil and when I shake well, it divides about equally. I have to use about a half of a 12 oz. bag of salad, as I do not have enough lunch time to finish a bag. I can do that at home. No cheese on salads for me, but that is just me. If I have sweet peppers, I will add some diced - about 1/4 of a pepper. And I love cucumbers, don;t always have them. If I am rally hungry, I will add a foil pack of Wild Caught Salmon on top. I usually eat an apple or I will peel and section an orange and take it ready to eat. About 20 minutes total to eat and get back to work.

My salads are not very exciting, but I like to keep it simple. I usually use one of the Dole Fancy Greens salad in a bag. Then add grape tomatoes, cucumbers, 2 oz. turkey, a sprinkle of feta cheese, and 1/4 cup of Aurora Natural Salad Fixins'. Top it all off with 2 tbsp. Light Ranch Dressing.

you donīt say what your usual salad is?

my favorite is a colwslaw. i make it with one apple,two carrots,two onions,some drumhead cabbage,(grate or shread all the above)add a handful of chopped nuts of your choice and a handful of lowfat grated cheese.(last two optional) and mix all together with a mayonaise/yogurt dressing or with a oil/lemon/herb dressing.my kids like it only dressing.you could also add great pepper,kohlrabi or what ever vegtables you have to hand,could also add raisins or dried cranberries.

my sons favorite salads are
cucumber(sliced really thin and served in a yogurt/lemon/mint dressing
apple and cucumber salad(both grated together with a squeeze of orange juice on them
tomatoe,cucumber and chilli peppers with red onions.chopp all together and sprinkle some lemon juice and mint over it

then you have also the rice or noodle or cous cous or bulgar or potatoe salad.
another favorite of mine is green bean and potatoe salad.cook the veg stir in some low fat cream or greek yogurt and mix in a mix for salads(dill mix is good)mix and cook on low till the cream or yogurt has thickened.delicious serves hot or cold.
