I had my Vega blended with 1 cup of unsweetened Almond milk, a small banana and some ice. Then I'm having fresh strawberries and light whipped cream for dessert! YUMMY!
lol I couldn't get my hubby to go out and get an Angel Food Cake so I'm a couple hundred calories under my eating range. Oh well. I got close.

We had cheese ravioli with fire roasted tomatoes, mushrooms, broccoli and a little cheese on top...YUM!!
BigRedAngel- Your dinners always sound so good. Yesterday I ate a huge amount of chocolate, so I skipped dinner. My stomach hurt anyway. :) Today I am planning a healthy vegetarian dinner though.

Last night I had a Fit & Active Lasagna meal with california blend :)
Had a ham sandwich with dijon, cheese, lettuce, tomato and onion on it, and a big salad with salad mix, tomatoes, onions, cheese, chow mein noodles and I made a ranch dressing with nonfat greek yogurt...whole dressing recipe is only 288 CALORIES!! And it was pretty good :)

Tonight I'm making crispy chicken strips with a spicy ranch dipping sauce, homemade mac and cheese(using whole wheat noodles, fat free milk, lowfat cheese and butter, with cauliflower mixed in), and salad. This is for my boys' superbowl party :)

My husband asked me to bake some chicken breast, vegetables and a corn bread. I'm not a fan of chicken breast or vegestables. I didn't have many calories left for dinner but I wanted something I would be satisfied with so I wouldn't be looking to snack later on. I ate a piece of cornbread with milk. No snacking afterwards.

Colleen I love your soup recipe. I've had patato soup before but your recipe seems to make it much more filling with the cauliflower added to it. I haven't seen surviver in a long time. I wouldn't know what's going on.

Ingredients:
2 russet potatoes, washed and dried 1 small head of cauliflower, stem removed cut into florets 1 1/2 cups fat free chicken broth 1 1/2 cups 1% reduced-fat milk salt and freshly cracked black pepper 1/2 cup light sour cream 10 tbsp reduced-fat shredded sharp cheddar cheese 6 tbsp chopped chives, divided 3 slices bacon, cooked and crumbled (you can use turkey bacon if you prefer)
Directions:
Pierce potatoes with a fork; microwave on high for 5 minutes turn over and microwave another 3 - 5 minutes, until tender. Or if you prefer to use your oven, bake at 400° for 1 hour or until tender. Cool. Peel potatoes.
Meanwhile, steam cauliflower with water in a large covered pot until tender. Drain and return to pot. On medium heat, add chicken broth, milk, potatoes and bring to a boil. Use an immersion blender to puree until smooth. Add sour cream, half the chives, salt and pepper and cook on low another 5-10 minutes, stirring occasionally.
Remove from heat. Ladle 1 cup soup into each bowl. Top each serving with 2 tbsp cheese, remaining chives, and bacon.

Baked Potato Soup
Serves:4
Prep Time: 30 Min
Cook Time: 1 Hr
Ingredients 4 lg baked potatoes, skin on, diced 4 slc turkey bacon, diced 2 c sweet onion, thinly sliced 1 c celery, finely chopped 2 clove garlic, minced 1 c sour creme, fat free or light ( You may use Lo fat or FF Yogurt) 4 c milk, fat free 4 c homemade chicken stock (or low sodium store bought) 4 oz feta cheese 4 oz lo fat cheddar cheese, shredded (reduced sodium) pickled banana pepper rings 1 tsp ea. of black pepper, & mrs. dash original blend salt to taste 2 Tbsp olive oil
Only made with lighter ingredients.
Directions
1 Bake potatoes and allow to cool. Dice bacon, slice onions, mince garlic, and chop celery, simmer in soup pot in olive oil till tender. When veggies are tender and bacon is done, add diced potatoes.
2 Add cool chicken stock, FF milk, and lo fat sour cream or lo fat yogurt . Cover and simmer for about 30 min. Add feta cheese. If soup needs thickening, mix 1/2c cold FF milk or water with 3-4 TBL of cornstarch. Add to soup and simmer till soup thickens.
3 Add shredded lo fat cheese,banana pepper rings, and turkey bacon on top NOTE: Allow soup to cool for a while, or even refrigerate overnight, the longer it sits, the more flavorful it gets!

I had crock pot chicken breast and baked potatoe ;-) Today for lunch I made a smoothie..... I was out of yogurt and tofu .... So I used 1/4 cup of Crystal Light Tea 1 med banana 1/4 cup pineapple w/ natural juice 1/2 cup of canteloupe 1 tsp of cider vinegar helps with gas blended well .... makes about a 10 ounce glass if you want it sweeter you can add aspartame or truvia.... I believe it has about 256 calories and is very filling...if you want omit the vinegar... I have a gas problem with certain fruits and the vinegar is and old fashioned remedy that helps..

My stomach was a little upset, so I just had steamed California Blend veggies with a small amount of cheese on them, with Butter Buds :)
The other night my mom insisted on chicken tacos- I took some of the chicken meat, heated it up, sprinkled a very little amount of cheese and placed it on a lovely bowl of salad- warm chicken taco salad!!! Saved me a bunch in the carb department

Thanks ladies...finally went to the bathroom and feeling better so trying a new easy recipe...Skinny Chicken Parmesan "Muffins", but I used ground turkey instead of chicken...smells yummy baking in the oven

Miralax or Lacy LaBeau Tea it is a natural tea only to be drinken after a meal...can be found at Wal Mart....I have had several abdominal surgeries including removal of the gall bladder and on top of being paralyzed for 3 yrs, I still suffer with chronic constipation and these are what the doctor has recommened for occasional use as well as a high fiber diet.... New Recipe!!! Check it out on shared recipe's...I used 1 can of tyson's grilled canned chicken breast, 1 can of Lo sodium corn, 1 can of mexican chili beans, 5 tblsps of salsa, 1 tblsp of chili powder to make a mexican chicken chili...I did not add any additional salt or condiments oor seasonings... Heated the chicken and corn first then the beans to bubbling followed up by the rest of the ingriedients and in under 30 minutes I had an incredible dinner..If you like sprinkle a lo-fat cheese of lo-fat sour cream and enjoy...I did the cheese and used the Tostitos whole wheat scoops and only had a cup and I was stuffed....After entering it in the recipe database, I found out it only has 180 calories per serving excluding the cheese... If you try it I hope you like it...
