Sounds good! I've got some whole wheat rotini I might try this way.

My big thing this week has been keeping a plate of cut-up veggies ready for noon so I don't have to make food choices when I'm starving. Today, I got really smart and prepped almost all the veggies I brought home from Azkaban, er Walmart, so all I have to do is put together a plateful.

Healthy Version of Fettuccini Alfredo

Modified from a recipe by Elie Krieger for Food Network (The original recipe calls for zucchini cut into ribbons mixed into the pasta, which is not included here.)

Yield: 4 servings
‘1 tablespoon olive oil
‘1 clove garlic, minced
‘12 ounces Fettuccini pasta, preferably whole wheat
‘1 tablespoon all-purpose flour
‘1 cup cold 1% low-fat milk
‘1/2 cup evaporated skim milk
‘1/2 teaspoon salt, plus more to taste
‘3/4 cup freshly grated Parmesan cheese
‘1/4 cup finely chopped fresh parsley leaves

Directions
1.Cook the pasta al dente according to the directions on the package. Ladle out a half cup of the pasta water and set aside. Drain the pasta and return it to the pasta pot.
2.Meanwhile, make the sauce. Stir the flour into the low-fat milk until it is completely dissolved. Put a tablespoon of olive oil in the skillet and heat over a medium-high heat. Add the minced clove of garlic and cook for 30 seconds. Add the flour-milk mixture and cook until the mixture begins to boil, stirring constantly. Reduce heat to low and cook, stirring, for 2 minutes more. Add the evaporated milk, salt, and cheese and cook, stirring, until the cheese is melted, about 1 minute. Season with additional salt to taste.
3.Add the sauce and 3 tablespoons of the parsley to the pasta in the pot and toss to combine. Add a little of the reserved pasta water as necessary to loosen.
4.To serve, place pasta mixture on each plate and garnish with remaining parsley.

Most gardens are starting to come in now here is a tasty marinade for grilling those veggies from your garden.

Curry Marinade
3 tablespoons balsamic vinegar
3 tablespoons fresh orange juice
1 tablespoon fresh lime juice
4 garlic cloves minced
1 tablespoon minced ginger
2 tablespoon curry powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1 tablespoon honey

Combine all the ingredients in a medium bowl or plastic bag that seals. I use a plastic bag,fill it with summer squash,zucchini,onions,bell peppers ect. Pour the marinade over the veggies and refrigerate at least one hour. Thread the veggies onto skewers and grill over medium heat for some tasty summer veggie kabobs.

This marinade would be lovely on fresh chicken breasts too

Here is another one I use often over after it is cooked fish.

Caper Salsa
1 large tomato
2 tablespoon capers
1/4 cup red onion chopped
1 bunch fresh basil,stemmed and finely chopped
Juice from 2 lemons
1 jalapeno pepper,seeds and membrane removed
Salt & Pepper
Finely dice the tomato and place in a bowl with capers,onion,basil,lemon juice and jalapeno.
Season to taste with salt and pepper. Let mixture rest for 1 hour in refrigerator.

Since its winter now in Southern Hemisphere I am adding a thick nutritios soup recipe

Bacon, spinach and barley soup
2 Tbs oil
1 med onion, sliced
2 sticks celery sliced
2 med carrot, sliced
2 bacon hocks
1 cup washed barley
4 bay leaves
3 cups baby spinach (or finely shredded silverbeet or chard)
Zest and juice of 1 lemon
Pepper to taste

Heat oil in large saucepan and sautι the onion, carrot and celery until soft – 8 – 10min
Add hocks, barley and bay leaves
Cover with a generous amount of water, bring to the boil, cover pan with tight fitting lid, reduce heat and simmer 2 hrs,
Remove bones and bay leaves and chop any large pieces of meat, then return meat to pan
Add spinach, lemon juice and zest and bring to boil to wilt spinach
Season with pepper and serve
Serves 4 – 6 persons

For a special occasion - and for those of us with a sweet tooth

Ingredients
Healthy Brownies – Jillian Michaels
•
• 2/3 cup Honey
• 1/3 cup Cocoa (natural, Unsweetened)
• 1/2 cup Whole Wheat Flour
• 1/4 tsp Baking Powder
• 2 tbsp Olive Oil
• 1 Egg
• 3/4 tsp Vanilla Extract
• 1/2 cup All-natural Applesauce
Directions
Place honey in glass measuring cup. Microwave until honey is runny. Add cocoa stir, cool. Mix dry ingredients mix applesauce, oil, egg and vanilla add honey mixture, add dry. Spray 8" pan with olive spray and bake @350 FOR 25 MINUTES Makes 16

A very simple nutritious recipe I was left on oner of my blogs - Lentils and Rice

My fave go to recipe is lentils & rice
Just need lentils, spinach or kale from garden, one onion, tomatos (fresh or frozen) and herbs like tumeric and cummin.
1. Put whole grain rice to cook.
2. Sautι onion in oil,
3. add tin lentil (or pre-soaked & cooked dry)
4. add tomatos, chopped up greens, herbs
and viola in 10-20 mins a hearty delicious meal.
This takes less effort than going to some drive- through or fast food joint with disgusting decor.

Homemade Soynut Butter

I found this article on Soy nut butter - to make yourself - looks easy and would be great for anyone with a nut or peanut alergy (careful over the choice of oil used!)!

In the United States, soynut butter has a surprisingly long history. The world's earliest known reference to soynut butter was in 1916, when John L. Kellogg (mentioned earlier) was granted the first patent on the product. (How make it??) Piper and Morse in The Soybean (1923) described soynut butter saying,

Roasted soybeans may be ground into a fine paste and with the addition of a refined oil, as peanut oil, mixed thoroughly through the paste, a sort of butter, resembling peanut butter, may be prepared. This product, if the beans are roasted simply to a light brown color, has much the same appearance as peanut butter and a very agreeable flavor

I use lots of brown rice. I have a fav dinner I make that my son and husband love.
I broil chicken breast, take already cooked brown rice, red, green, and yellow bell peppers, onion, and tomatoes. Mix all together. Season to taste.
It is absolutely delicious!
I put brown rice in lots of dinners, or have on the side.

Top 10 Vegetarian Snacks
• Most of these snacks require some preparation. Kids can help or do this themselves.
• Several of these easy vegetarian and vegan snack ideas are quick to prepare and travel well.
• All of the following snacks (except the yogurt with flax and yogurt sauces) are vegan, when made using vegan ingredients. For example, this could mean using vegan margarine instead of butter. But beware of hidden ingredients.
Savoury Vegetarian Snacks:
1. Falafel (from scratch or from mix)
If using mix, this takes about 20 minutes. Bake the falafel or drain the oil from frying to minimize fat. Dip the fried or baked falafel in one of the following toppings:
• Yogurt-tahini sauce: mix plain yogurt with garlic, tahini, and lemon juice (not vegan)
• Salsa
• Guacamole
• Tzatziki (yogurt-cucumber sauce, not vegan)
2. Microwave Popcorn
There is no need to buy microwave popcorn full of fake butter by-products. Make it at home using real butter or margarine and your favourite seasonings. Here is an easy Microwave popcorn recipe on the cheap.
Ingredients:
• 1/2 cup popcorn
• 2-3 Tbsp. melted butter or margarine
• Salt and seasonings (e.g. spices, parmesan cheese etc.) to taste
• Standard brown paper lunch bag
Directions:
• Pour kernels into standard brown paper lunch bag
• Fold the top over twice and press down firmly; each fold should be 1/2 inch deep.
• Place bag in microwave, on turn table.
• Cook on high 2-3 minutes, or until pops are 5 seconds apart.
• Toss with melted butter or margarine, salt, and seasonings of choice.
3. Nuts for Dates
• Stuff 1/4 cup mixed nuts or almonds inside 10 small dates.
4. Sweet potato Chips
 1 orange Sweet potato
 Spray olive oil
 Herbs and/or spices of your choice


1. Preheat oven to 200C. (400F)
2. Slice peeled sweet potato into thin slices.
3. Place sweet potato slices in a large baking dish; spray lightly with oil,.sprinkle with chosen herbs and or spices
4. Bake for 40 minutes or until browned.
5. Baked Chips with Refried Beans
• Find a no-additive brand of corn or tortilla chips and serve with salsa heated with refried beans.
Sweet Vegetarian Snacks
1. Mini pita bread (muesli, apple cinnamon etc.)
• Try an all-natural brand like Pita Break.
• Freeze and toast when needed.
• Top with peanut butter, nut butter or jam.
2. Yogurt
• Stir in ground flaxseed and fruit for a nutritional boost.
3. Organic instant unsweetened oatmeal
• Top with non-dairy milk, nuts, peanut butter and/or raisins.
4. Tofutti cutie or vegan "ice cream" sandwich
• When nothing else will quench that sweet tooth.
5. An organic apple or celery
• Top with natural peanut butter and raisins.
• Some apples may be waxed with carmine, which makes them shiny and more red. Carmine and its intense red colour come from crushed beetles, so are not really vegetarian. Organic apples are generally not waxed and might be a better choice

LADISHEFFLADY1 - if you have a Trader Joe's many of their salad dressings are lower in sodium compared to regular store brands. Also Galeo's brand, which are hard to find but you can check their website.

For a quick and easy lunch, I just had a package of Green Giant Rice Medley. It had peas, mushrooms, rice and a sauce with it.

I've been trying the various vegetables in the frozen Green Giant area too, like the Healthy Weight, Antioxidant... They are all in a light sauce and pretty good, even when I think they don't SOUND good.

One of the veggie ones, I mixed with a Lean Cuisine Oriental style dish and it was soooo good. Lots of fiber and vitamins.

Yes, I know, and sodium too. Be careful about the sodium content for some of these. While some are moderate to low, some are very high.

Healthy Choice has about the lowest and it is still relatively high if you are counting sodium.

Did you know that, just because you are on a calorie controlled eating plan, eating healthy foods - you needn't go without your creamy sauces and finishes to dishes.
Just cut up some low fat cream cheese and disolve that into the hot liquid - it will both thicken and cream the dish giving a beautiful rich smooth taste - and only you will know your secret!!

Asian Ginger Vinegerette

Prep Time: 9 Min
Cook Time: 1 Minute
Ready In: 10 Min
Original Recipe Yield 20 Servings

Ingredients
3 cloves garlic, minced
2 tablespoons minced fresh ginger root
3/4 cup olive oil
1/3 cup rice vinegar
1/2 cup soy sauce (low salt)
3 tablespoons honey
1/4 cup water

Directions
1. In a 1 pint glass jar or larger, combine the garlic, ginger, olive oil, rice vinegar, soy sauce, honey, and water. Cover the jar with a tight fitting lid, and shake well. Remove lid, and heat jar in the microwave for 1 minute just to dissolve the honey. Let cool, and shake well before serving. Store covered in the refrigerator.

Sorry - I am Australian - no idea what is available in US
However - I often use a touch of lemon, lime or orange juice over salad. and toss in some finely chopped fresh parsley, basil and oregano
or Balsamic vinear - even whisk in a very small amount really good olive oil to lemon or lime juice with chopped fresh herbs (or put it in a screw top jar and shake - gives arm exercise!!) Personally I find it as easy to shake some up myself as to buy - if I make it I know whats in it!!

Its supposed to be nearly Summer in the Northern Hemisphere now - and salads will be common - they can be really healthy and low calorie foods - so I thought we could share some ideas for healthy salad add-ins.

I like to add some craisins (dried cranberries), and a little avocado to my salad.

Greek yogurt is great - its higher in protein than other yogurts - but take careto get low fat and no added sugar. Some of the fruit flavoured yogurts have a huge amount of sugar added!!

I use Greek yogurt to make a tasty easy nutritious breakfast
Bircher Muesli -
Mix 2/3 cup natural muesli (not the toasted) with 2 tsp ground cinnamon, and 250g (8oz) unflavoured low fat Greek yogurt. Add 1 eating apple grated (leave skin on) and mix well to coat apple in yogurt. Leave overnight in fridge and divide between 2 dishes, next morning with 1/4 cup milk and 1 tsp honey drizzled over each dish.

I only started eating Greek yogurt the other month and I really like it.

Another healthy snack, almonds. A small handful is a good source of protein and good fats.

I love love love greek yogurt. I use it as a spread, dip, dressing, and of course just to eat. I love the thickness of it. I find other yogurts to be too thin and too sweet.

In a prebariatric program hoping to get approval for weight loss surgery.

I too love yogurt. I tried the greek, but didn't care much for it. Maybe I need to try it again but a different flavor.
I usually get the Yoplait Light in the various flavors, but lately, I get the Very Vanilla and add some blueberries (fresh or frozen that's been thawed) and I also crush up some pretzels to put in it. Gives it a sweet and salty flavor that is addictive. You have to try it! Trust me, you'll be hooked.

I buy Kroger brand Carbmaster Yogurt. It has low sugar, the texture reminds me of Greek yogurt and it has an ubeatable price tag.

I love fruit! I'm addicted to cuties at the moment, and apples. I also really like yogurt. I just tried a caramel Oikos greek yogurt today. It was pretty good. It's really thick and has a tangy taste. I think I'll try a fruit flavor next. I don't know about it being a health food, but I enjoy using liquid eggs for breakfast...I love to make them all kinds of ways...low calorie and really good. Air popped popcorn is a favorite of mine too for a low cal crunch!

I love Yoghurt too ... at the moment I am on a Organic one.
Next week I am back to Greek.
I love to alternate, so my body doesn't get too used to the same thing!!

I have bought yogurt several times because i know it's healthy for me but end up throwing it away ! I love soy nuts ! emoticon

The Lord is my strength and i know i can do better with the Lords help. The Lord laid it on my heart to start a team called GOD ANSWERS PRAYER AND I WOULD LOVE TO HAVE ANYBODY THAT WANTS HELP TO LOSE THEIR WEIGHT TO JOIN . I KNOW I CAN'T DO THIS WITHOUT THE LORDS HELP !
