With breakfast I had 2 TBSP unsw raisins, for lunch I had cooked carrots with a couple grinds of multicolored peppercorns, and a 12 bag of mixed romaine salad with 1/2 cucumber and 4 sliced radishes, and a apple. For dinner, more cooked carrots (these were all the fresh long carrots with tops, that you scrub, peel, slice and boil or steam) and Italian green beans. Think I could live on veggies, they are my favorite foods.

I have done #1...I had celery with PB for breakfast, and a mix of lettuce, carrots and cabbage in a salad for lunch :) had green beans with supper :)

Great challenge! I have at least 2 servings in my chicken tortilla soup I made last night. I brought it for lunch today. It has emoticon emoticon emoticon emoticon emoticon and corn. :) And I have about 1 1/2 cups mostly veggies. It also has beans in it:) For a snack I have 2 emoticon (manderine oranges). Yum yum! Perfect challenge!!! It's been a long couple weeks with finally moving our entire household to Arkansas!! I hope loading, unloading, unpacking and going up and down stairs all day counts as exercise....... emoticon (how's that for a veggie/fruity smilie face....LOL)

I made black bean chili yesterday with homemade tomato sauce out of my garden. Today I'm going to make hamburger soup with celery, carrots, tomatos and broccoli. For breakfast I'm going to have celery and p'nut butter.....thanks for mentioning that idea!!

Mixed salad greens are planned for lunch today with pear and walnuts and blue cheese.
Mixed salad greens and cherry tomatoes are in my plan for dinner this evening to go with a spicy red lentil vegetable stew that I made yesterday. This stew has carrots, tomatoes, peas and jalapeno peppers in it.

Veggies are IN this week!! The VEGGIE Challenge will be to do THREE or more of the following mini challenges:

1. Eat at least 4 veggies a day! Post on this thread which ones you ate.
