Lo-Carb Cheesecake (LowCarb Energy magazine, p64)
8 servings

Filling:
2 8-oz pkg cream cheese, softened
1/2 cup Splenda
1/2 tsp vanilla
2 eggs

Crust:
1 1/2 cups finely chopped walnuts (or other nuts)
3 Tbls Splenda
2 Tbls butter, melted

Mix crust ingredients and press into bottom and sides of pie pan
Mix softened cream cheese, Splenda and vanilla with mixer on medium speed until well blended
Add eggs, one at a time, mixing well after each addition
Pour into crust
Bake 350 for 40 minutes, or until center is almost set
(let cool a little before placing into refrigerator to chill)
Refrigerate three hours or overnight.

Optional: Top with berries

1.5 fiber
9 protein
39 fat
398 calories
