For those of you not familiar with Healthy Exchanges abbreviations, here's the recipe legend to help you.
The Diabetic Exchanges are calculated by a Registered Dietician and the other calculations are computer based, using The Food Processor II software.
When the ingredient listing gives more than one choice, the first ingredient listed is the one used in the recipe analysis. Due to inevitable variations in the ingredients you choose to use, the nutritional values should be considered approximate.
The brands suggested are the editors favorites at this time. They have been carefully tested for taste, appearance and ease of preparation and are included only as suggestions. If you prefer another healthy brand, please feel free to substitute.
For canned goods, the most commonly found size is listed. If you can't find the exact size listed, use the closest size or two smaller cans that add up to the same number of ounces.
The following symbols are used after each recipe: Br = Bread Ca = Carbohydrate Cl = calcium Fa = Fat Fi = Fiber Fr = Fruit Mt = Meat Pr = Protein SM = Skim Milk Sl = Slider St = Starch So = Sodium Ve = Vegetable OC = Optional Calories
