Thank you. I have saved this with my Diabetic friendly recipes because you included the nutritional data. That makes a big difference for me.
Impossible Apple Pie - Healthy Exchanges newsletter October, 2007
3 cups (6 small) cored, peeled & sliced cooking apples
1-1/2 teaspoons apple pie spice
1/2 cup Splenda Granular
2/3 cup Carnation Nonfat Dry Milk Powder
3/4 cup water
1/2 cup Bisquick Heart Smart Baking Mix
2 eggs, or equivalent in egg substitute
2 Tablespoons + 2 teaspoons I Can't Believe It's Not Butter Light Margarine
1/3 cup chopped pecans
Preheat oven to 325 degrees. Spray an 8-by-8 inch baking dish with butter-flavored cooking spray. In a medium bowl, combine sliced apples and apple pie spice. Layer in bottom of prepared baking dish. Place Splenda, dry milk powder, water, Bisquick, eggs, and margarine in a blender container. Cover and process on HIGH for 15 to 20 seconds or until mixture is smooth. Pour over apple slices. Sprinkle chopped pecans evenly over top. Bake for 55 to 60 minutes. Place baking dish on a wire rack and let set for at least 5 minutes. Divide into 8 servings.
