I and a few others, I think Randella and some others. Have all tried it, and was pretty disappointed with it. Seems I have thrown at least one batch of it away just cause I couldn't stand it any more. However, there was a kernel of flavor in there that was close to KFC's coleslaw, which I really really like. So I vowed I would keep playing with it till it was right.
First it curdled when I made it, I used bottled lemon juice. Something in my gut told me it was in using bottled lemon juice and not fresh that made it curdle. Even though JoAnna had said we could always use bottled lemon juice in her recipes as most people had that in their fridge. She didn't specifically say in this particular recipe though. She just said that in general in other books and such. The curdling wasn't big curds but more of a sandy texture would occur with fizzy bubbling. Any way, I decided to try fresh lemon juice. NO curdling this time!
I also decided to cut the lemon juice in half, and only use 1 tablespoon instead of two. I tasted the final dressing and loved it! Cause even when I made it the first time, as I was putting in two tablespoons I was thinking wow this seems like a lot of lemon juice for this amount of dressing, but I will trust JoAnna and go with it.
Also because it's what I had on hand, I used the fat free miracle whip instead of mayo. I'm not sure if that made any difference in the final outcome or not either. But, wanted to add that.
Any way, I added the cabbage. And I like my cole slaw well marinated and "wilted" so waited over night. It came out perfection! I love it! So just wanted to let you know, I think I fixed it. And wanted to share that.
JoAnna was pretty good at her recipes, so I am thinking it was a typo that said 2 tablespoons instead of one on the lemon juice. Cause from time to time especially with the newsletter since it was put out so quickly (put out each month) unlike the books it wasn't edited as closely and so from time to time there was typos in it. And generally they would be revised in the next months newsletter (saying we made a typo in this recipe here's the corrections) but also generally it would be generated because people would call Healthy Exchanges saying there was something wrong with the recipe, and upon further inspection they would find the typo. So maybe no one tried the recipe or called in, that month. I don't know. Either way, I am betting the 2 tablespoons and not 1 was a typo. And maybe she didn't think to add to only use fresh lemon juice and not bottled on that recipe!
Any way, I'm just happy I got it all revised and working and wanted to share it with you. It's BBQ and picnic weather here. And we took it to a bbq yesterday so I wanted to post it for the rest of you if you have something similar you want to take a coleslaw to!
