Easter Menu - a great meal
Easter this year I went for more of JoAnna's recipes than ever before and the meal was great!

My ham was cooked in a roaster oven (like the Nesco tabletop appliance) and if you have one, it makes a beautiful, moist ham.
The Apple-Raisin sauce is quick to make and a favorite with ham.
Jiffy Scalloped potatoes, if you haven't tried them, what are you waiting for? :-) They are very good and easy-peasy!
Tropical Ambrosia Salad was made the day before and I added a couple of handfuls of seedless red grapes. Very good!
Layered Party Pea Salad was made the day before as well. No wilting at all.
Daddy's Deviled Eggs were a hit (thanks Heather!) and were difficult to eat just two halves. Perfect.
The coconut cake was made from two recipes. The cake from Across America and the frosting was Grandma Jo's Seven minute frosting from Baking with Splenda and was the first time I made any seven minute frosting. I was striving to make something like the coconut cake that Pepperridge Farms makes and I'm convinced the frosting is a Seven minute kind. I used vanilla extract and sprinkled UN toasted coconut on top as I like the look of white on white. There was plenty of coconut flavor in the cake and the 2 tablespoons of flake I scattered on top. I made this the day before and chilled it because of the frosting. It was very good.
Making what I could the day before and leaving only the ham, potatoes, raisin sauce and rolls to prepare and cook on Easter day made it restful, enjoyable for the cook.
