1 1/2 cups Bisquick Reduced Fat Baking Mix 2/3 cup Carnation Nonfat Dry Milk Powder 1/2 cup frozen whole kernel corn, thawed 1 full cup ( 6 ounces ) finely diced Dubuque 97 % fat free ham or any extra lean ham 1 cup water 3/4 cup Cary's Sugar Free Maple Syrup
In a medium bowl, combine baking mix and dry milk powder. Stir in corn and ham. Add water. Mix well to combine. Using a 1/3 cup measure as a guide, spread batter onto a griddle or in a large skillet sprayed with butter flavored cooking spray to form 6 pancakes. Flatten slightly with spatula. Cook over medium heat until pancakes are browned on both sides. For each serving, place 1 pancake on a plate and pour 2 tablespoons warm syrup over top.
HINTS: 1. Thaw corn by placing in a colander and rinsing under hot water for one minute. 2. Warm syrup in microwave while preparing pancakes.
