Good Morning Team:

Ive made a couple more things:

Apple-Cheddar Salad p.139 4 stars. This is an apple fruit salad with celery, walnuts and cheddar. I love these types of fruit salads with lots of crunch and flavors. JoAnna gets this dressing just right and just in the right amount too. I can never eyeball how much, so her salad recipes are valuable to me. The lemon juice adds just enough tang along with the small amount of mayonnaise and Splenda. I never would have guessed 1/4 cup mayonnaise would dress the whole thing, but it does. Everyone loved it.

Cherry Swirl Coffee Cake p238. 4-5 stars! This makes nice portions and I cut it into nine pieces instead of eight! Even though the men say they dont care for cherry sweets, I had to fight to have them save me a piece. The directions say to drop eight mounds of batter over the top of the cherry layer (already a layer of the same batter on the bottom) and then bake it, it didnt look swirled. I kept thinking Im supposed to swirl the eight mounds then bake it, but I baked it like it said. I checked with the NL where this recipe was first introduced and the same directions of put eight mounds then bake it were there. At any rate, this is a good one. I loved the flavor of the batter for a sweet cake.

I made the Scrumptious Surprise Lemon Cake p.262 that a couple of people here have said it was a good one and it is true. This is a must make recipe!! I did as Heather suggested and put a few pieces of fresh lemon zest over the top and not only does it give it a pretty look, but also a fresh lemon smell and taste! We all had seconds of the pie, even though we shouldnt have. We did have some the next day as well and the crust holds up beautifully the second day too. This would be a fantastic pie for company and can be served anytime of the year IMO. Winter when lemons are in season, Spring when everything is fresh, Summer when you want a light dessert, Fall because its there. emoticon Do make this pie. You'll be glad you did!

Since my last post of this cookbook Ive made some more recipes:

Lime Nut Salad p.136, 5 stars. This reminds me of my grandmother's lime salad to the T! Its a classic for sure. Although I forgot to add the nuts, it was very good. Even the men who "claim" they dont like cottage cheese loved it. Its refreshing and can be a good sweet salad for anytime of the year.

Bayou Country Meat Loaf p.221 4 stars. this is a spicy meatloaf and we loved it. Its baked in an 8x8 dish and I have to say, I love this way of making a meat loaf. for one, its easier to cut a chunk of meat than a slice and it baked beautifully even. Everyone got their fair share of topping and since it covers most of the area of the meat better than a loaf, I think I will be making meat loaves in an 8x8 than the loaf dish from now on.

Maple Custard p.229 5 stars! This is super easy and light tasting. I served this after Jeanie's Taco Bake (4-98) and something about maple flavor after Mexican was just right. This is made in the microwave and prolly took me 5 minutes tops to make it. Since I never buy cook n serve pudding anymore and prefer to make the homemade version JoAnna has mentioned in the NL (2 Tbs corn starch, 1/2 cup splenda) I did add a teaspoon of vanilla after it was cooked, before pouring it into the custard cups. It was more like a maple pudding, but refreshing and light in texture.

Cupid's Chocolate Cups p.247 3-4 stars. These are actually tarts and calls for the graham tart shells, but I used the new chocolate tart shells and they were good. A quick and very cute little cream tart. I would give it more stars, but it was more like a simple chocolate cream pie, not too special, but good nonetheless.

Peach Becky Pie p.255. 5 stars!! I used canned peaches, which I chopped because I didnt have fresh. I did drain them very well. The pie has an excellent flavor and made with instant vanilla pudding, you basically just put it together -no cooking. Its very good. The second day was a tad runny and when I make this again, I will cut the water down to 1 cup since we never eat a whole pie in one day.

Sarah: using sliced potatoes in the German Potato Salad is a wonderful idea!

OK, off to make that lemon pie Heather is bragging about. :-)

WOW You've done well Sarah, I need to post the rest I have tried from this book as well.

I agree sliced potatoes with a german potato sounds better to me.

I also agree about noodles. However, I have noticed if the noodles are cooked already they do fine in the crock pop indeffinately, just not uncooked. However, I want to try one more time with uncooked, I think the problem may be putting noodles in at the beginning and not waiting for the liquid to get hot on high first? But, I don't know. What you think?

Heather I made that pie and gave it 5*'s also. I really liked it.

Other recipes I've tried:

Grande Chili Cabbage Soup - Page 88 - 4*'s I used only 8 ounces of tomato sauce and I added 1 cup of water, otherwise it was way too tomatoey

Depression Potato Soup - Page 92- 4*'s- Next time I make this I will use less celery, it was too overwhelming to me. I'll use half the recipe calls for.

Country Style Vegetable Beef Soup - Page 99 - 5*'s I added a 16 ounce can of diced tomatoes and a can of drained green beans. This is one of my favorite soups. I also make this in the crock pot. The noodles I cook separately and add a few minutes before eating. I don't like noodles from the crock pot. Sometimes I use diced potatoes rather than the noodles.

German Potato Salad - Page 121 - 5*'s --I made this by the recipe and really liked it. I did slice rather than dice the potatoes, LOL minor point but it is in my notes in the book.

Fruit Cocktail Salad - Page 132 - 5*'s Excellent didn't change a thing. When I was working I took this to work and several asked for the recipe.

Green River Salad - Page 134 - 5*'s Loved it exactly as it is.

Lime Nut Salad - Page 136 - 5*'s I love this salad. It is my favorite sweet salad and I have made it over and over.

Country Style Green Beans - Page 151 - 5*'s Loved it, I've made it several times and the only difference is that sometimes I use the Splenda sometimes I don't. It's simple to make and good.

Zucchini Spaghetti - Page 171 - 5*'s Love this, I've made it zillions of times. In fact I'm making it again this week!

French Onion Chicken Bake - Page 179 - 5*'s Another recipe I've made a lot. Easy and good.

Fresh Strawberry-Rhubarb Pie - Page 250 - 5*'s Loved it

Caribbean Queen Cream Pie - Page 154 - 5*'s Excellent pie but it is better if eaten within a day or the strawberries got weepy. Yours might hold up better but my strawberries were mushy but otherwise it was excellent.

Irish Spring Pie - Page 256 - 5*'s Excellent The flavors together I really liked had my doubts but it was yummy.

Heavenly Hash Pie - Page 260 5*'s Another excellent pie

Scrumptious Surprise Lemon Pie - Page 261 - 5*'s I agree with Heather, this is a great pie!

Cinnamon Cream Rolls - Page 286 - 5*'s I had forgotten that I made these. My notes say dangerous, wanted to eat too many of them! LOL


Zucchini Bread - Page 290 - 5*'s I took this to work and everyone really liked the bread. I am going to make it this month.

I have made a few recipes from the Diabetic cookbook and the ones I have made were winners. The things I have made are recipes I make over and over. To me this is a winner cookbook!

I made the Scrumptious Surprise Lemon Pie, it was fantastic! Nice big portions! Lela loved it and couldn't stop eating it.

It was a perfect ending to our pot roast dinner. Very much a comfort meal.

One thing, I would suggest if taking it to a gathering or for company, I think I would add 1 tablespoon of toasted coconut on top just for looks. It's beautiful when sliced! (the layers) But, before being sliced, it's a little plain looking on top. I usually have coconut in the freezer so I would do that. Or if you have fresh lemons, then I would just put some thinly sliced lemon twist on top! Or wait.....light bulb moment! A zero cal and I bet yummy thing would be just add some lemon zest sprinkled on top! You know that's what I am doing next time, lemon zest! Oh that would really zing it up! It's already great, but that would put it over the top!

This is one book I havent cooked much out of. Throughout the month, I will try more and post my reviews.

I have tried:

German Potato Salad p.121 I noted, "very-very good" and 4 stars. I cant remember the dish so I need to make it again. This month would be perfect for it.

Cinnamon Cream Rolls p.286 5 stars and double awesome are my notes for this one. These are the best cinnamon rolls! I have a tradition of making them on any holiday morning for breakfast, especially on Easter, Thanksgiving, and Christmas. They are quick, easy, and good. I do add a little brown sugar Twin to the cinnamon mixture.

I better get to cooking!!
