Okay, today I made 4 recipes from the OPen Road Cookbook.
Fort Lauderdale Banana Pie, page 225.
This was very good, though I did not make it like a pie. As I had no cool whip, I added the milk instead of the coolwhip, and it was too runny, so I added another package of pudding. It was very good. I put it into goblets alternating between the pudding and raspberries. So yummy, and so pretty.
BBQ sandwiches, page 113, very good, just like sloppy jos. If you like sloppy jos, you will like this.
Green bean succotash, page 133. this was okay, but nothing special. just tasted like green beans and corn. A good way to get in more veggies, but nothing special.
Carrot Raisin relish, page 121. this was super good. I first put the raisins in the bottom of the bowl, and added everything but the carrots, to help the raisins absorb the moisture. Then I grated the carrots. Added it in. Let it sit for a few hours, and the raisins were nice and plump. This tasted very good. I will make it again.
It was a yummy supper, with lots of fresh fruits and veggies, the raspberries, and bananas, raisins, carrots, beans, corn, and onions in the sloppy jos.
