Cherry Cola Salad

Oh, remember those golden days of childhood, when you asked the man behind the soda fountain to mix you up the best cherry Coke in town? I do! Now I'm celebrating those good memories, and the flavors you never forgot, in this luscious fruit-and-nutty salad.

1 cup (one 8-ounce can) crushed pineapple, packed in fruit juice, drained and 1/4 cup liquid reserved
3/4 cup water
1 (4-serving) package JELL-O sugar-free cherry gelatin
1 (8-ounce) package Philadelphia fat-free cream cheese
3/4 cup diet Coke
2 cups (12 ounces) bing cherries, pitted and halved
1/4 cup (1 ounce) chopped pecans

In a small saucepan, combine reserved pineapple liquid and water. Bring mixture to a boil. In a large bowl, combine dry gelatin and boiling liquid. Mix well to dissolve gelatin. Add cream cheese. Mix well using a wire whisk until smooth. Stir in diet Coke. fold in pineapple, cherries, and pecans. Pour mixture into an 8-by-8-inch dish. Refrigerate until firm, about 3 hours. Cut into 8 servings.

Hint: Bing cherries are also known as dark sweet cherries

Serves 8 - each serving equals:
