Ok there was quite a few typos in that, and I didn't even look at it, sorry about that.

Heather,

I have a couple of questions (I don't have this book). First when it says "1 (6 ounce can) white tuna, packed in water, drained and" what should follow "and". Second it says " For each serving, place 1 muffin half on a plate and spoon about 1/2
cup tuna / shrimp mixture over top.", How much shrimp? It does sound good though.

Tuna Corn Sauce Over Muffins
from MAKE A JOYFUL TABLE on page 184
serves 6

1/4 cup kraft fat free mayonnaise
1 (10 3/4 ounce can) Healthy Request Cream of Mushroom soup
1/ cup skim milk
2 teaspoons dried onion flakes
1 (6 ounce can) white tuna, packed in water, drained and flaked
1 cup (one 8 ounce can) whole kernel corn, rinsed and drained
1/2 cup + 1 tablespoon (2 1/4 ounces) shredded Kraft reduced-fat Cheddar cheese
1 teaspoon dried parsley flakes
3 English muffins, split and toasted

In a medium saucepan, combine mayonnaise, mushroom soup, skim milk and onion flakes. Stir in tuna, corn, cheddar cheese and parsley flakes. Cook over medium heat for 6 to 8 minutes or until mixture is
heated through, stirring often.

For each serving, place 1 muffin half on a plate and spoon about 1/2 cup tuna mixture over top.

Each Serving Equals: He: 1 1/3 Bread, 1 Protein, 1/2 Slider, 2 Optional Calories

187 Calories, 3 Gms Fat, 14 Gms Protein, 26 Gms Carbohydrate, 616 Mgs Sodium, 184 Mgs Calcium, 2 Gms Fiber

Diabetic: 2 Starch, 2 Meat
