Blueberry Fruit Fluff Salad serves 6 (2/3 cup) From Cancer Recovery Cookbook
1 (4 serv) pkg. Jello sugar free vanilla cook and serve pudding mix 1 (4 serv) pkg Jello sugar free strawberry gelatin 1 1/4 cups water 1 1/2 cups frozen unsweetened blueberries 3/4 cup Cool Whip Free 1 cup (one 11 oz can) mandarin oranges, rinsed and drained 1 cup (2 small) cored, unpeeled and chopped Red Delicious apples 3/4 cup (1 1/2 oz) mini marshmallows
In a medium saucepan, combine dry pudding mix, dry gelatin, and water. Stir in blueberries. Cook over medium heat until mixture thickens and starts to boil, stirring often and being careful not to crush blueberries. Place saucepan on a wire rack and let set for 20 min., stirring occasionally. Spoon blueberry mixture into a large serving bowl. Stir in Cool Whip Free. Add mandarin oranges, apples and marshmallows. Mix gently to combine. cover and refrigerate for at least 30 min. Gently stir again just before serving.
