1 - 4 serving pkg Jello sugar free vanilla cook & serve pudding 2/3 cup nonfat dry milk powder 1 3/4 cup water 1 tsp vanilla extract 1/2 tsp apple pie spice 2 cups hot cooked rice 1/2 cup raisins
Preheat oven to 350. In a large bowl, combine dry pudding mix, dry milk powder, and water. Mix well using a wire whisk. Blend in vanilla extract and apple pie spice. Add rice and raisins. Mix well to combine. Evenly spoon mixture into 4 - 1 cup custard dishes. Place custard dishes in an 8x8 inch baking dish filled with 1 inch of water. Bake for 25-30 minutes. Place baking dish on a wire rack and let stand for 5 minutes. Good served warm or cold.
Hint: 1 1/3 cups uncooked rice usually cooks to about 2 cups.
