1 (8-ounce) package Philadelphia fat-free cream cheese 1 (4-serving) package Jello sugar-free instant vanilla pudding mix (use chocolate) 2/3 cup Carnation Nonfat Dry Milk Powder 1 1/3 cups water 2 teaspoons lemon juice (leave out) Sugar substitute to equal 1 tablespoon sugar 1 teaspoon vanilla extract 3 tablespoons purchased graham cracker crumbs or 3 (2 1/2-inch) graham cracker squares made into crumbs 1/4 cup Cool Whip Lite
In a medium bowl, stir cream cheese with a spoon until soft. Add dry pudding mix, dry milk powder, and water. Mix well using a wire whisk. Stir in lemon juice, sugar substitute, and vanilla extract. Spoon mixture evenly into 4 parfait glasses. Refrigerate for at least 1 hour. When serving, sprinkle each with about 3/4 tablespoons graham cracker crumbs and top with 1 tablespoon Cool Whip Lite. Serves 4
