HINT: 1 cup uncooked rice usually cooks to about 1 1/2 cups.
-In a large bowl, combine dry pudding, mix, dry milk powder, and water. -Mix well using a wire whisk. Blend in Cool Whip Free and coconut extract. -Add rice and pecans. Mix well to combine. Gently stir in blueberries. -Evenly spoon mixture into 6 dessert dishes. Top each with 1 teaspoon coconut. -Refrigerate for at least 30 minutes. -Serves 6.
