Italian Pepper Steak
Peppers are just packed with vitamin C, so when they're in
season, I cook with them and chop them into salads as often as
possible. For the meat lovers in your family, here's a bella way
to have your beef and still live healthy. Serves 6

16 ounces lean round steak, cut into 32 thin pieces
2 cups chopped green and/or red bell peppers
1 cup chopped onion
1 (10 3/4 0z.) can Healthy Request Tomato Soup
1/4 cup water
2 teaspoons Italian seasoning
1/2 teaspoon dried minced garlic
3 cups hot cooked spaghetti, rinsed and drained

In a large skillet sprayed with olive oil-flavored cooking spray,
saute steak, peppers, and onion for 10 minutes or until tender. Stir
in tomato soup, water, Italian seasoning, and garlic. Lower heat
and simmer for 10 minutes or until mixture is heated through,
stirring occasionally. For each serving, place 1/2 cup spaghetti on
a plate and spoon about 3/4 cup beef mixture over top.

HINTS:
1. To make slicing beef easier, freeze 1 hour before slicing
2. 2 1/2 cups broken uncooked spaghetti usually cooks to about 3
cups.

Each serving equals:

HE: 2 protein, 1 bread, 1 vegetable, 1/4 slider, 10 optional calories

249 calories, 5 gm fat, 21 gm protein, 30 gm carbohydrate,
192 mg sodium, 22 mg calcium, 2 gm fiber

DIABETIC: 2 meat, 1 1/2 starch, 1 vegetable
