16 ounces ground 90% lean turkey or beef 1 rounded teaspoon Morton Tender Quick Salt 1/2 teaspoon garlic salt 1/2 teaspoon mustard seed 1 teaspoon Hickory Seasoning Liquid Smoke
In a large bowl, combine meat, tender quick salt, garlic salt, mustarad seed, and hickory smoke. Mix well to combine. Cover and refrigerate.
Take out once a day for 3 days and mix well, recovering each day.
On the 4th day, form into a long roll and place on a broiler pan. Bake for 8 to 10 hours at 150° ( YES, THE BAKING TIME IS CORRECT ALONG WITH THE OVEN TEMPERATURE). Turn roll over once during baking. Cut into 6 equal servings, then cut each serving into thin slices.
