Tex-mex "sausage" Skillet

Amount Measure Ingredient -- Preparation Method

8 Ounces Ground Turkey or Beef -- 90% lean
1 Teaspoon Jo's Sausage Seasoning
1 3/4 Cups Hunt's Chunky Tomato Sauce
1/2 Cup Chunky Salsa
1 Cup Frozen Whole-kernel Corn
2 Ounces Dry Instant Rice -- (2/3 cup)
4 Slices Reduced-fat American Cheese -- halved diagonally (3/4 ounce)

In a large skillet sprayed with olive-flavored cooking spray, brown
meat. Stir in Jo's Sausage Seasoning. Add tomato sauce, salsa and
corn. Bring mixture to a boil. Stir in dry rice. Remove
from heat. Top with cheese triangles. Cover. Let set 5 minutes.

Each serving equals:

Diabetic: 2 Mt, 2 Ve, 1 St

Hint: 1/2 teaspoon poultry seasoning, 1/4 teaspoon ground sage
and 1/4 teaspoon garlic powder can be used instead of Jo's Sausage
Seasoning.
