1/4 cup fat-free mayonnaise 1/4 cup fat-free Thousand Island dressing 2 cups (one 16-ounce can) sauerkraut, well drained One 2.5 ounce pkg. 90% lean corned beef 4 (3/4 ounce) slices reduced fat Swiss cheese 1 cup sliced fresh tomato 2 slices reduced-calorie rye bread, cut into small pieces
Preheat oven to 350 degrees. In a small bowl, combine mayo and dressing. Layering in an 8-by-8-inch baking dish, place sauerkraut on bottom, then corned beef, dressing mixture, Swiss cheese, and tomatoes. Sprinkle bread on top.
Bake for 20 minutes.
OPTION: In a non-stick pan sprayed with butter-flavored cooking spray, lightly saute bread.
