American Cheese Meatloaf
16 ounces ground 90 percent turkey or beef
1/2 cup plus 1 tablespoon dried fine bread crumbs
1/2 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1 (10 3/4-ounce) can Healthy Request Tomato Soup
1 teaspoon prepared mustard
1 teaspoon dried parsley flakes
1/8 teaspoon black pepper
3 (3/4-ounce) slices Kraft reduced-fat American cheese
Preheat oven to 350 degrees. Spray a 9- by 5-inch loaf pan with butter-flavored cooking spray. In a large bowl, combine meat, bread crumbs, onion, green pepper and 1/3 cup tomato soup. Mix well to combine. Pat mixture into prepared loaf pan. Bake for 45 minutes. Stir mustard, parsley flakes and black pepper into remaining tomato soup. Spread soup mixture evenly over partially baked meatloaf. Evenly arrange cheese slices over top. Bake for an additional 15 minutes or until meatloaf is cooked through and cheese has melted. Place loaf pan on a wire rack ad let set for 5 minutes. Cut into 6 servings.
Each serving equals: 209 calories, 9 grams fat, 17 grams protein, 15 grams carbohydrates, 484 milligrams sodium, 92 milligrams calcium and 1 gram fiber.
