HE-MAN MAIN DISH CASSEROLE January 2002 Newsletter
8 ounces extra-lean ground turkey or beef (I use beef)
1/2 cup chopped onion 1 1/2 cups finely chopped celery 1 (10 3/4 ounce) can Healthy Request Cream of Celery Soup 1/3 cup fat-free milk 3/4 cup (3 ounce) shredded Kraft reduced-fat Cheddar cheese 1/8 teaspoon black pepper 2 1/2 cups (12 ounce) diced cooked potatoes
Preheat oven to 350 degrees. Spray 8x8 inch baking dish with butter-flavored cooking spray. In a large skillet sprayed with butter-flavored cooking spray, brown meat, onion and celery. Add celery soup, milk, Cheddar cheese and black pepper. Mix well to combine. Lower heat and simmer for 5 minutes or until cheese melts, stirring occasionally. Layer potatoes in prepared baking dish. Evenly spoon meat mixture over potatoes. Bake for 25 to 30 minutes. Place baking dish on a wire rack and let set for 5 minutes. Divide into 4 servings.
