Serves 6 (1 1/2 Cups)

3 Cups diced raw potatoes
2 Cups sliced carrots
1 1/2 Cups frozen peas, thawed
1 Cup chopped onion
1 1/2 Cups sliced celery
16 ounces extra lean ground turkey or beef
1 (10 3/4-ounce) can Healthy Request Tomato Soup
3/4 Cup hot water
2 teaspoons dried parsley flakes

Spray a slow cooker container with butter-flavored cooking spray. Layer potatoes, carrots, peas, onion, and celery in prepared container. In a large skillet sprayed with butter-flavored cooking spray, brown meat. Layer browned meat evenly over celery. In same skillet, combine tomato soup, water, and parsley flakes. evenly spoon soup mixture over meat. Cover and cook on LOW for 6 to 8 hurs. Mix well before serving.

Each serving equals:
HE: 2 Protein, 1 1/2 Vegetable, 1 Bread, 1/4 Slider

255 Calories, 7 gm Fat, 18 gm Protein, 30 gm Carbohydrate, 365 mg Sodium, 47 mg Calcium, 5 gm Fiber

DIABETIC: 2 Meat, 1 1/2 Starch, 1 Vegetable
