Faux Steak with Green Pepper Sauce Page 230 in Easy and Economical
Some fancy restaurants serve steak with a tangy pepper sauce, but I'm just not willing to blow the month's food budget on a big chunk of beef. Here's a version that will tantalize your taste buds and appeal to your eyes as well. Only your pockbook will know for sure! Serves 6
16 ounces ground 90% lean turkey or beef 1/8 teaspoon black pepper 6 tablespoons (11/2 ounces) dried fine bread crumbs 13/4 cups (one 15-ounce can) Hunt's Chunky Tomato Sauce* 1/2 cup sliced onion 2 cups coarsely chopped green bell peppers 1 teaspoon prepared mustard 2 teaspoons Worcestershire sauce 1 Tablespoon Brown Sugar Twin
In a large bowl, combine meat, black pepper, bread crumbs and 1/4 cup tomato sauce. Mix well to combine. Using a 1/3 cup measure as a guide, form into 6 patties. Place patties in a large skillet sprayed with butter-flavored cooking spray. Brown patties for 3 minutes on both sides. Sprinkle onion and green pepper over browned patties. Continue cooking for 4 to 5 minutes. In a small bowl, combine mustard, worcestershire sauce, Brown sugar Twin and remaining 11/2 cups tomato sauce. Pour sauce mixture evenly over top. Lower heat, cover, and simmer for 15 minutes. When serving, evenly spoon sauce over patties.
