8 ozs ground 90% lean turkey or beef 1 tsp JO's Sausage Seasoning or any reputable brand 1-1/2 cups (8 ozs) diced cooked potatoes 1/2 cup chopped onion 1 cup chopped fresh tomatoes 1/2 cup chopped green bell pepper 1 cup chunky salsa 4 (6-inch) flour tortillas 1/3 cup (1-1/2 ozs) shredded Kraft Reduced Fat Cheddar Cheese 1/4 cup Land O Lakes No-Fat Sour Cream
In a large skillet sprayed with butter-flavored cooking spray, brown meat with sausage seasoning. Add potatoes, onion, tomatoes, green pepper and salsa. Lower heat. Cover and simmer 10 minutes. For each serving, place tortilla on serving plate, spoon about 3/4 cup meat mixture over tortilla, top with full 1 tablespoon Cheddar cheese and 1 tablespoon sour cream. Serve at once.
