Scalloped Pizza potatoes.

6 cups frozen hash browns
1 can healthy request tomato soup
3/4 cup reduced fat shredded cheddar cheese
1 tsp pizza or Italian seasoning
1 can sliced mushrooms - washed and drained
1 cup chopped onion
1/4 cup chopped ripe olives (I left this out)
Spray crockpot with olive oil cooking spray.
Combine all in crockpot, mix well, cover and cook 6 - 8 hours on low. (mine was done in about 5 hours.)
This says serves 4 but could easily serve 8.

For an 8 serving size,
Per Serving (excluding unknown items): 173 Calories; 2g Fat (12.2% calories from fat); 6g Protein; 33g Carbohydrate; 3g Dietary Fiber; 2mg Cholesterol; 193mg Sodium. Exchanges: 2 Grain(Starch); 1/2 Lean Meat; 1/2 Vegetable; 0 Fruit; 0 Fat.

For a 4 serving size,
Per Serving (excluding unknown items): 347 Calories; 5g Fat (12.2% calories from fat); 13g Protein; 65g Carbohydrate; 6g Dietary Fiber; 4mg Cholesterol; 387mg Sodium.

This says serves 4 -- but I have enough left for at least 4 more
servings after we ate last nite. I went lite on the cheese - about
1/2 cup as my husband is on a low sodium diet -- so wanted to
reduce the sodium. It was good and I would make it again.

The nutritional info in the Joanna's cookbook for 4 - 1 cup servings
is:
246 cal. 6 gm fat 10 gm protein 38 gm carb. 439 sodium, 100 mg.
calcium 5 gm fiber

Diabetic - 2 starches 1 meat 1/2 veg.

I don't understand the great discrepancy in the nutritional findings.
I do know that this recipe came out to more than 4 - 1 cup servings as
stated in the recipe.
